Nothing beats coconut milk, with creamy sweet Indian Spices, Delicious sweet potatoes over fragrant Basmati Rice!  Mmmmm thank goodness I made enough for left overs tonight :)

This morning I finished my Angels 101 book!  I woke up this a.m. super excited to get my read on and to eat my favourite summer fruit of all times…….mmmmmmm…..an Organic Nectarine!  Come to momma!

My sad Vega Story…..

I am flat out of vega.  I didn’t realize how much I rely on all of these product throughout my day and when I go to get a scoop, I can’t.

I was at Whole Foods today and stopped at the Vega section to pick my choices and WOW – The tubs at WF’s is $11 MORE than what I normally pay at my local grocery store!

So now I am out of vega, not sure when I will get to my local store to pick it up for cheaper and might miss having it for my breakfast tomorrow!

Am I being crazy over $11 dollars? Would you have purchased it for more money if you knew you needed it the next day?    UGH.  Maybe I am just being too “set in my ways” with my breakfast.  I feel I need this for my morning ;)

Tonight is the Celebration of Light here in Vancouver!  These fireworks run for 2 weeks on Wednesday and Saturday nights.  They are amazing!  Ryan and I usually head up the mountain that over looks where the barge is set up and bring our snacks :)  We stay away from the mobs of people that will flood around English Bay as it stresses me out!

Daily Detox Drops Winner and Date Sweetened Cookies

Now onto the next topic of convo today – COOKIES!

This is kind of a funny story…..This just shows how many things I have on my mind right now.

I started to bake these cookies and realized half way through I was completely out of vanilla and agave! What the heck?!  This is not like me at all to let my baking stash to dwindle down this low.  So I had to improvise.  Dates.

I soaked some dates in warm water  for 5 – 10 minutes and placed them in a blender and made a paste.  This was my agave ;)

I also added some shredded carrot and pumpkin pie spice to mask the lack of vanilla!

These babies turned out really, really Great!

By Accident Cookies:

2 cups pecans (or nut of choice – almond flour, etc)
1 cup oats
1/2 cup almond butter
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp sea salt
1/2 tsp baking powder
2 tbsp coconut oil
1/3 cup flax meal
1/2 cup date paste
1 small shredded carrot
1/2 cup raisins

Directions

Preheat oven to 350

Place nuts and oats in a food processor or blender and blend until fine

Add spices, raisins, sea salt, baking powder and carrot to the flour.  Mix well.

In a separate bowl add flax, nut butter, date paste and coconut oil.  Mix well.

Add wet to dry and mix.

Roll into balls and place on a greased baking sheet.  Press with a fork.  Bake for 13 minutes.

These cookies are so Healthy!  Great for people who really watch their sugars and have to stay away from sweeteners :)

Granola the Extra Natural Way

Good Morning Everyone!  Happy Saturday to you all!

How is your morning going??  Mine is going extra well – it is 7:30 am and I have already gone to the gym and am sitting now to drink my Ghetto Green!  Yup, I still have not exchanged my Blender as of yet, so the whole 3 rd floor of the Condo loves me every morning whirling away extra long…..sorry everyone on the 3rd floor!

I am really interested in this Sunwarrior Protein Powder everyone is raving about, I might need to purchase some and this to my ghetto greens for a while.  How do you all like it?

My Friday was such a major busy day!  Up early and to the gym for some treadmill work.  Haha I call it “Treadmill Work” and all I did was walked very fast for 25 min while reading my Alive Magazine! But in the end I felt refreshed.  I also did a bunch of lunges with weights across the whole room and back a couple times ;)

The rest of my day was baking for tonight’s Festivus and working, twitting, facebooking, eating, meetings, and then we attended a Christmas Gathering with Ryan’s family last night.  Phew!  It was a busy one and I did not get my Red Cup on Friday like I normally do on Friday’s…..

In my day of baking I made the famous Mint Chocolate Cookies, Veggie Crackers, and Granola!  I mean really, super healthy GranolaI sweetened this batch with dates and let me tell you – dates are like natures toffee these things are so delish and sweet it gave the granola the perfect taste.

Granola

Kris’ Extra Natural Granola

3 cups Oats
1 cup Soaked Dates (keep soaking water)
1 cup warm Filtered water
5-6 tbs Almond Butter
2 tbs Coconut Oil
2 tsp Cinnamon
1/4 cup Raisins
4 tbsp Raw Cocoa Nibs
1 tsp Vanilla
Dash of Sea Salt

Preheat Oven to 300

Place Dates in 1 cup warm Filtered Water and let sit for 5 min

Meanwhile add all other ingredients into a bowl

Mash Dates in Water when soft – mash into a thick paste

Add date mix to the other ingredients – Mix well

Spread on a baking sheet and bake for 35-45 minutes braking granola apart with a spoon as it bakes

Once it was done and cool, I add a bit of almond milk to these golden nuggets and enjoyed the natural sweetness.  Mmmm nothing beats good granola.

So today is another SUPER busy day for Moi as I am off to a meeting after this from 10 -1 and then I still need to pick up a few things for the gathering tonight and bake some bread, cookies and clean! YIKES!

Sweet Chocolate Almond Butter Cups

Howdy,

Happy Tuesday morn to you all!  I am up and ready to start my beautiful sunny day – that’s right, you heard me – It is sunny in Vancouver.  Thank you mother nature, we all really needed some Vit D around here.

I loved all the great comments on Coconut oil as a moisturizer!  It works surprisinly really well when and your body is thanking you for the outside nourishment ;)

I received a few emails on the brand of Coconut Oil I use – Currently I am using the Orphee Activa Organic Coconut Oil.  It is nice and coco nutty and it is very reasonably priced for Cold Pressed, Virgin Coconut Oil.  I actually paid $9.99 on sale!

This morning I am quite well rested and I believe I am so well rested and “perky” because last night I had the house to myself….Ryan was out a meeting for work and I was baking, blog reading and rockin’ to Christmas music with Hudson.  It was such a chill night.  Ryan asked if I wanted to go with him to his seminar, and you know when you honestly just want to stay home…and not worry about a thing?  That was my intuition telling me ”stay home and relax” so I decided to let him go on his little lonesome. 

I was cleaning the kitchen when I had a thought to make some Chocolate Almond Butter Cups.  I decided to use dates and raw almond butter as the filling and coconut oil, cocoa, and agave as the chocolate (as seen in previous post, this is my weakness).   Off I went to concoct these cups and I think these  little gems turned out wickedly!  I need to learn how to channel in recipes better, sometime I get some real great ones and this one is pretty darn good.

Kris’ Sweet Almond Butter Cups

makes 4 – 5 cups

Chocolate:
3 tbs Cocoa (might need more depending on how dark you want the chocolate)
2 tbs Coconut Oil
1 1/2 tsp Agave Nectar (or more depending on sweet tooth level)

Filling:
2/3 cup of dates (soaked)
3 tbsp Raw Almond Butter

Mix the chocolate mixture together, and pour a little bit in 4 or 5 muffin liners

Place in the Freezer to firm

Meanwhile – mash dates and Almond butter together in a separate bowl

Remove the muffin liners from the freezer and place even amounts of filling in each one.
*Make sure to press the filling down

Add more chocolate sauce to the  top of the filling and place back in the Fridge or Freezer. 

Let set for about 15 – 20 minutes and enjoy!

 

I must also mention I have a Life Coachappointment today and I am sooo looking forward to it.  It has been 2 weeks since I last saw her, and I have so much to tell her!!  I am noticing such a wonderful difference and confidence in myself since working with her……ahhh I am my new BFF and I am a pretty darn good friend to myself ;)    My list of items and areas to work on to go over with her today already printed and ready to go.  Until then I must run and get Carrots and Celery as we are flat out…..again.

My Food Confession – Vegan Easy Icing

Happy Monday All!!

How was your weekend??  Mine was really good.  I honestly can not believe how fast it flew by though, one moment it is Friday and the next it is Monday beeping in my ear at 6:00 am!  Sunday Ryan and I sat at S’bucks and enjoyed a little christmas cheer before heading to the grocery store to get our food for the week (few days actually before I need to restock the veg!) and then we headed off to a meeting.  Today was the first mentorship/ training meeting I had with Dr. Jonn Randel.  We went over different plant based solutions for a healthier lifestyle.  It was so interesting and I am getting myself set up so I can go out and teach all of this!!  I have been staying away from all skin care with chemicals in it for a few months now and it is really making a difference, my skin looks fed.

 As a body moisturizer I just use coconut oil and it works like a dream and smells like a vacay!  Perfecto!  Going to bed with me is like laying on the Hawaiian sands ;)

Did you know that it is so important to get variety in the foods you eat  (Krissy at balanceisbeauty.ca  explained to me the importance of variety once also ;) ) and the right plant based minerals to obtain all of the 72 + trace minerals our bodies need?   I am not just talking vitamin C, I am talking about selenium, chromium, silver, etc.  They say that on an average, a human might consume 20 proper trace minerals a day, where as a dog gets 35 because it is added to the pooch food!  So when you think about most people living with a SAD diet, their dogs are better off than they are!   Not me – variety and nutrition is my spice of life ;)   I am learning all of this and it is so much fun!!

 After this meeting we came home and had a super quick dinner – Vegan Veg Pasta with Rice Noodles and out the door we went to another Canucks game…..boo hoo they lost to San Jose….Better luck next time boys!!  The box was full with wonderful people again and it was great to chat and hang out.  Love it!!

We got home late…..and I was hungry so I had some Mary’s twigs in Chipotle Tomato flavor…then I always seem to go back to my 3 amigos…..ok, this is what I eat:

Vegan Icing

1 tbsp
cocoa
1 – 2 tsp coconut oil
drizzle of agave.
 

Mix it all together and eat….

Some times I put pecans in it :|   But I used this for bars, cookies, you  name it!  This is so good and I really should slow down on it and possibly replace this with some carrot sticks….ugh

I am off to another full day and looking forward to sitting by my tree tonight with a cup of tea!

Vegan Past Dish and My View on Soy

Howdy Everyone!

I hope your Tuesday flew by like mine did?!  I have been up and about since 6 am and I am finally fed, face washed and my pj’s on!  On the way home Ryan and I stopped at the grocery store to replenish some of our essentials as I was flat out of apples!  Don’t you hate that when you realize on the way home you have NO APPLES?!   We eat a lot of apples a day between the two of us, so we picked up a couple bags of organic sweetness ;)

After the wonderful shopping experience, we had dinner (Left over pasta – recipe below) and then hit the gym!  P90X kenpo style….I really do love this workout because there is a lot of variety.  I will be honest I am probably not good at kenpo karate, but it makes me smile, so that is all that matters.

Now I am sitting by my tree with the dog and my tea!  Perrrrfect.

This is dinner from last night and tonight – Pasta

Kris’ Garden Green Vegan Pasta:

1 package Brown Rice Pasta (I used whole grain brown rice spaghetti)
1 vegan boullion cube
2 cups water
2 zucchini’s
1 red onion
1 bell pepper
3 medium tomatoes
1 cup sun dried tomatoes (no sulpher or sodium)
2 tablespoons EVOO
2 cups frozen peas
3 cups spinach
1/2 cup fresh basil
Sea salt to taste

Boil Pasta and cook according to package
Heat olive oil over medium heat
Add boullion to water in separate sauce pan and bring to a boil
Add the onions and sun dried tomatoes to the olive oil and cook until onions are clear, Add the zucchini, pepper, tomatoes, and peas.  Stir around for a couple minutes.
Add the broth the the veggies and simmer until the pasta is done.
When the pasta is done add the fresh spinach and basil and stir into the veggies.

Add pasta to plates and top with the sauce!  YUMMM!

My Soy View

tofu-in-bowlI have been speaking to a few people who have been asking me if I eat soy, and if I think it is a good choice of protein.  I do not eat it.  I am allergic to it, but even if I wasn’t I would not eat it.  I hope no one gets upset with me dissing the soy products!!  I always had issues with tofu and soy milk after I ate them, so  I always knew it wasn’t good for me.   At one of my appointments I heard that soy is really not good for women, I really started to research this.

Some people believe Soy products are a good source of protein,  and they may also believe that it protects you against cancer, heart disease and reduce menopause symptoms.

The research that has concluded that all soy products are healthy, are too far from accurate.

I have been told to stay clear away from Genetically modified soy at all costs! The GM soy are the worst for your body due to the pollutants they add to the soy.

If you are thinking - phew, I eat unfermented soy – think again.  Unfermented soy is a real issue….this includes tofu, soy milk, soy baby formula, soy protein powders and alternative meats (ex. Tofurkey!).  These are all made from hydrolysed soy powder.

What is wrong with this you ask?  “I thought Soy was a legume, so it is healthy”!?  Yes, soy belongs to the good ol’ bean family and most people would think this is great!  The thing is, soy has a large amount of phytic acid and phytic acid in large amounts can block us from essential minerals such as, calcium, copper, magnesium, iron and zinc in our intestinal tract.

I know, ’tis the season for Tofurkey to rear it’s head in all the vegetarian’s homes for the holidays, but before breaking that package open please see some of the areas that this type of soy does not benefit your bod!

Soy contributes to thyroid disorders, promotes kidney stones, it can weaken the immune system and contribute to food allergies and digestive intolerance!   I think I know that one ;)

The area I found most scary about soy is that the phytoestrogens in soy actually mimic the effects of the female hormone, estrogen. They say drinking 2 glasses of soy milk a day for 1 month can alter a woman’s cycle.  wow.  Unfermented soy also contain high levels of aluminum which is a major toxin to the nervous system and our kidneys!  Why do health stores even carry these products?

Don’t get me wrong, you can benefit from soy, but it has to be fermented soy – such as organic miso, natural soy sauce, and organic tempeh. Fermented soy is good for your tummy as it benefits the friendly bacteria in the large intestine.

Remember, Fermented soy = Good
Unfermented Soy = BAD

Of course this is my own opinion and I have researched what I have on this over the years, and I know my body does not like soy, so I choose to stay away.

There are so many other healthy, clean ways to get protein when a vegetarian or vegan, just do some research and follow all the other lovely blogs out there that provide a wonderful variety of soy free foods.

That is my little 2 pennies ;)
