Happy Thursday Everyone!
Thursday is one day closer to the beautiful weekend! How are you enjoying your day so far? I am off to a coffee meeting with Ryan’s sister Krista, so mine is starting off very well
Yesterday I picked up some organic strawberries on sale and they are so good! Nothing beats a sweet, fresh, organic berry. Just so full of flavour! I thought it would be nice to make some strawberry muffins yesterday, a little concoction I put together by adding strawberries to this muffin recipe found on OneFitFoodie.com!
I used Bob’s Red Mill Gluten Free All- Purpose Baking Flour for the base and the Strawberries substituted for the apple sauce. Oh.my.goodness. these muffins are like mini cakes!


What better way to eat them than with Banana Soft Serve and sliced strawberries to make a delish Strawberry Shortcake!

Banana Soft Serve:
2 frozen banana
1/2 can organic coconut milk
1/4 cup dark chocolate chips
Add all ingredients to the food processor or blender and watch the soft serve appear!
So creamy, smooth and perfectly sweet! I could live off of this stuff!

We ate these while we watched the movie Leap Year
I am a sucker for Romantic Comedies and thought this one was really cute.
**Tip – Soak your berries in a bath of water and All Natural Fruit and Veggie Wash for 5 – 10 minutes before eating. Apparently berries hide dirt and bacteria in there little groves
You can get some great veggie wash here!
I use fruit and veggie wash for all my produce!

I love strawberries, but now knowing their dirty little secrets I am not sure anymore.

Oh I love berries..all of them. Yet, I have a special place in my heart for blueberries:)

I LOVE strawberries! Those muffins look so awesome!
I think blackberries are my favorite. Back when I still had my horse, there were blackberry bushes in the fields. I would stand there with him and pick them in the summer (yes, my horse picked berries too). Thats probably why I love them so much.

I love strawberries too
But it’s hard to find organic berries over here & just knowing that they’re #1 on the dirty dozen list…I’m usually taunted by them and have to pass them up.

Great berry washing tidbit, though I don’t have the patience to do anything more than rinse them quickly under running water… if that! Terrible I know haha. But they’re just so darn good I have to gobble em up right away. I’m a berry addict. Love em ALL, though straw, blue and rasps take the cake. That’s nearly all of them isn’t it

I’ve never used veggie wash before. I’ll admit, sometimes I just eat things w/o washing it like a few grapes here and there. Or I’ll just rub my apple on my shirt. I know its not good but meh…I’m still kicking

I was allergic to strawberries when I was little, so I am going to wait a while before introducing them to Hayden. Thank goodness I outgrew it, as strawberries are one of my faves. They are lovely in muffins, and that banana n’ice cream is a perfect pairing

I have been loving strawberries lately. We picked them last Saturday and I have literally eatin’ 2 gallons in one week! Your muffins look delicious!
