Oaty Bars That Fuel My Fire

Happy Friday!

I love Friday posts because I feel we are all on the same happy vibe!

Today is a smidge cooler than it has been for the last few days and they are actually talking a bit of rain for tomorrow!  The rain is good and bad.  I flat out hate the rain, but I know that we need it to clear the lingering smoke that is filling our city from the forest fires up in the interior.  So for that reason I will allow the rain to come.  But only for a couple hours!

UGH. I am officially flat out of buckwheat flour which has been a major staple in my baking lately.  Without healthier treats around the house Ryan would have “nothing” (so he says) to take with him if he has to run to a meeting or needs a break from the computer.

He likes quick and easy snacking ;)

I looked through the cupboard to see what I could make and luckily I had some oats!  So Oaty Bars it was :)

I just throw a bunch of my fave ingredients into a bowl and mix well.

The bars yesterday were made up of:

2 cups oats
1 mashed banana
1/4 – 1/2 cup agave (depending on how dry the mixture is)
1/4 cup coconut oil
1 tsp vanilla
2 tsp cinnamon
1/2 cup chocolate chips
1/4 – 1/2 cup raisins
1/4 cup unsweetened coconut

Mix well by hand and lay flat on a parchment lined cookie sheet.  I make my bars about 1/2 inch thick.

Bake at 350 for 20 minutes.  Sometimes I leave them a tad longer to get them a bit crispier ;)

These suckers go pretty quickly!

I usually make myself some a raw version which is very similar to this recipe, I just put them in the freezer instead of the oven and add some vega to the mix….mmmmmm

Sigh….I love treats ;)

Today I have a coffee date with Kate!  I am so excited to relax and chat over a decaf americano ;)

My fingers are crossed that Ryan and I can go to a movie tonight or rent a movie so I have an excuse to make some cheesy popcorn!

I am stopping at Whole Foods after my coffee date to pick up some more nutritional yeast.  I need to figure out a way to incorporate this B12 booster into my bod!  Any recipes or suggestions for eating the NY?

Do you prefer your granola bars baked or raw?  What sweetener will you use in your granola bars?  How do you incorporate nutritional yeast into your diet?

    LOL – I love treats too and those sound good. I have only tried my hand at raw bars once. I liked them, but they weren’t portable b/c they got too soft. I use nutritional yeast quite a bit actually. I love to sprinkle it on any pasta dish or even just grilled veggies.

    This bars look fantastic, I haven’t been able to make bars that held together as of yet! I will try this soon!!! I have been using noosh all week! Before, it sat in my cab, I added it to shakes a few times….but ths week I made vegan parm, and a vegan mac n cheese….lots of cheese recipes with cashews and noosh….thats my new thing! Also, like I said, to get the B12, I have added them to smoothies, I don’t even taste it, so it’s allll good!

    As you already know, I LOVE treats, too!! Almost TOO much. ;)

    I’ve actually never tried making my own granola bars before! Sounds like something I should remedy soon! I’ve been really into making raw treats lately, but I enjoy baked ones, too! I think it really depends on the season for me– when it’s cooler outside, I definitely prefer more baked goods, and when it’s hot out, I gravitate more towards the raw stuff…

    And when I’m in a pinch, I always have a stash of Larabars on hand!

    I love creating my own bars… these look GREAT!

    my favorite recent nutritional yeast addition was a vegan caesar salad dressing… SO good! I made it for a group of people, didn’t tell them what it was, and everyone was calling it caesar. :)
