I hope your weekend has been great and you have been enjoying every little moment of it! Yesterday I had such a great day – I had a meeting at Christmas Starbucks, then I went for lunch at this amazing vegetarian restaurant here in Vancity called The Naam (Justin Timberlake goes here! I know….he is my celeb crush……but don’t tell anyone then I went book shopping! I picked up a great book by Debbie Ford whom I really love. Have any of you read any of her books??
I know the American Thanksgiving is coming up soon and for all of my American friends I wanted to post the famous sweet potato recipe that Ryan has whipped up. Ryan once (back in the day) was a chef at a very well known restaurant here in Vancouver – Joey Tomatoes Mediterranean Grill. For my Vancouverites raise your hands for Joey’s Anyways these sweets pots are amazing and he just had them made for me one night last week when I got home from work. They are the perfect sweetness and all around delish!
Ryan’s Fall Sweet Potato Recipe
3 medium Sweet Potatoes cut into cubes
1-2 tsp Cinnamon (depending on how spicy you want it)
Boil the sweet potatoes with the skin on – When the sweet pots are done remove them and place them in a food processor. Add the dates and the cinnamon and process. They will become fluffy and light!
Look at this – I could lick the screen!
