Oat Free Fall Granola

How are you??  I hope you are having a beautiful morning!

It is a little rainy here this morning, which surprisingly I am not too sad about.  Am I feeling ok??

Speaking of “feeling ok” I was not feeling OK yesterday morning after I posted :(  All I have to say is being a woman *sometimes* stinks and I NEVER take advil and I took 3 yesterday…….frig.

After I felt better I decided I really needed to get out of the place.  My mom was heading shopping so I figured what better way to feel better than to go shopping!  We went to the mall and I picked up some wonderful new shampoo and product, which I can’t wait to do a product review, because they are FAB!

And then at the grocery store I picked up 3 lbs of my fave summer fruit of all time….PRUNE PLUMS!  Organic baby, and on sale! ;)  I know how to rock the party, trust me.

After our shopping trip I headed home where we feasted on Leftovers, watched Hot Tub Time Machine and I baked some homemade granola.

Ever since my friend Gillian mentioned to me on Twitter that she  had been baking Fall Granola I have been craving  it!

I placed myself in the kitchen and started throwing things into my mixing bowl, my food processor and Voila, and AMAZING OAT FREE Granola was born :)  Happy Birthday Oat Free Granola!

This stuff is freaking tasty, healthy and loaded with nutrients.  Ok, so you wanna know what is in this bad boy?

Oat Free Fall Granola

2 cups quinoa flakes
1/2 cup raisins
1 small apple (I used a mac)
1/4-1/2 cup water
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
Few sprinkles of raisins
2 tbsp cinnamon
1/4 tsp sea salt
3 tbsp agave nectar
2 tbsp coconut oil

Place all the dry ingredients in a bowl.  Leave out the 1/2 cup of raisins and just sprinkle some raisins in with the flakes and seeds.

Cut up the apple and place it in the food processor along with the 1/2 cup raisins and the water.  Blend until smooth.

Mix the apple/ raisins mixture with the agave and coconut oil.

Mix the wet with the dry and lay on a parchment lined cookie sheet.

Bake at 350 for 25 – 30 minutes.  *I might try a lower heat for longer next time just to see if it makes a difference in the crispiness.

I am taking this with us to a Brunch that is happening at Ryan’s Parents house this morning!  I will also bring along some Rice Milk to serve with it and it is a beautiful, vegan breakfast / brunch!

Do you like granola?  Can you eat oats or do you have an allergy? I don’t have an allergy to oats, but I try to stay away from them as I have read they are very acidic on the bod.  So I will opt for quinoa first.

**Healthy Tip! At my recent Ann appointment (life coach) we discussed *change*.  Change was something that normally freaks me out, but when mentioned “what would happen if you surrender?” I was at a loss.  What would happen if I just surrender to change?!  WOW, I did this yesterday and just started going with the flow, and I felt great.  I can’t control situations, and change allows great things in your life.  Without Change, we Can not Grow!  If you are scared of change, I would like to ask you, What Would Happen If You Surrender?

    I love granola – so much I try not to keep it on hand too often. I can eat an entire batch in a single sitting ;-) Love the idea of the quinoa flakes – boost of protein too I imagine. Glad you’re feeling better.

    Ah, sorry you weren’t feeling so hot! That’s the only time I ever resort to pain-killers, too!

    I love granola, but I almost never eat it! I used to work at a restaurant that made a great house-made version, but I’ve never taken the time to make some myself! I usually avoid oats as well, so yours sounds divine!! (esp. with rice milk!!)

    Can you tell me more about what you’ve read on oats & acidity? I have steel cuts every morning and I’ve never heard this before but now you’ve got me wonderin!

    Yum!! That looks yummy!! I love granola!!! I have hemp granoa + for lunch extremely often!!! :D They make you go to the bathroom, which is good :)
    But granola with quinoa?!?!?! Is that good?!?! How different does it taste from oat granola?? And what’s your favorite non-dairy milk with granola?? Mine is soy!!! :D

    Granola is awesome, but I can eat it like nobodies business and then my tummy gets angry! I really like how you used a pureed apple/water in place of oil. That’s my kind of swap!
