How the heck are ya??
Wow! Thank you ALL so very much for the support, love and kind words yesterday when I posted my “Egg Drama” and I really poured myself into that post letting my true inners come through. It was actually very natural for me
Last night I actually bought some eggs and when I went to bed I was having a nightmare about pork. I guess I had really stirred up some juicy waves in the brain when I bought these eggs {thinking if it was right or wrong} and when I fell asleep dead animals were popping up in my head. In this dream I had gotten a free dead pig, I was freaking out and woke up so upset! UGH.

I have been so excited to post this tasty option to traditional granola which is usually based on oats. Well I came across this killer recipe on Clean Eating Chelsey and instantly fell in love! I tweaked it just a tad to make it “Kris” friendly and it is supurb. Thanks Chelsey!!
Pumpkin Maple Quinoa Granola:

1.5 cups dry quinoa
2 cups vanilla rice milk
1 tsp cinnamon
1 tsp pumpkin pie spice
2 tbsp vanilla
1/4 cup pumpkin puree
1/2 cup maple syrup
1/4 cup pumpkin seeds
1/4 cup raisins
2 tbsp chia seeds
Bring the quinoa, milk, spices and vanilla to a boil.
Lower the heat and simmer for 10-15 minutes depending on when the quinoa is done.
Mix the pumpkin, maple syrup, seeds and raisins together.
Pour the pumpkin mixture into the quinoa pot and stir well.
Spread the wet granola onto a parchment lined cookie sheet and bake for 1 hour. Mixing every 20-25 minutes to get evenly brown.
I eat mine straight out of the bowl or eat it with a tiny bit of rice milk! De-Lish!
So I forgot to mention that we did not get to go see The Social Network the other night as our plans fell through and we got caught up elsewhere. I am hoping to get to it before the weekend!
Last night we decided to take it easy, eat a nice dinner and I caught up on all my Real Housewives epi’s……ahhhh it felt so good to have a free moment for myself and really relax
Dinner was a variety of Roasted Veggies!! With a side of lentil soup I made a few nights ago.
The roasted veggies were:

sweet potatoes
funky squash {don’t know the proper name}
brussel sprouts
Mixed with olive oil, sea salt and seasoning. MMMMM

We also had a side of cauliflower! I do love cauli…..always have.

I am off to hit the gym and rock out some Starbies work! I am approaching the launch of the product I have been promoting online and I am excited to have my “Blogging Time” back! Phew!
**Something to Discuss: Remember it is so important to put your own “Flair” into everything you do! your business, your blog, on social media, your daily life….etc. It makes everything so much more enjoyable and brings the people to you! I love pumpkin baking! Actually I just love baking in general.
I always use the canned because it seems like using fresh pumpkin would be a lot of work. I wouldn’t even know where to start. Like, do you get a whole pumpkin and.. scrape stuff off the sides?? I just don’t know.. haha.

this looks fabulous… I’ve been wanting to bake with quinoa, or make a granola… I may have to do this one… pumpkin and maple? Yum and YUM !

I love making granola with non regular ingredients like quinoa! I will definitely try this out. What temp did you bake it at? I don’t think I saw it above.
