Faux PB Kelloggs Treats and Open Hearts

It’s Sunday.  It’s Raining. What better than to fill the day with the new Agave Nectar I purchased and star experimenting with some vegan treats!

Before we jump on into the treats I wanted to be open and honest about where I was in my life last week.

Yes, of course I was over the moon getting the community all together, but a part of me was scared and I realized that I was holding myself back from my dreams of starting a community online like iheartwellness.ning.com

I am big on setting intentions as you remember from this post, but for I still get caught up in the funky self talk sometimes…

The video explains what I was doing to myself and then what I did to successfully change my mindset and outlook :)

Back to the Treats! So yesterday at Whole Foods I picked up some new Agave Nectar that they had on the self.  The reason I chose it was because it is in a glass bottle.  I will purchase something because they are in glass as it makes me feel better.  The Eat It Up! Brand has packaged this agave with a really cute feel and it kind of gets me into the summer time feel……

So the treats I made this morning bright and early {I swear I could bake and experiment all day long…} was some Killer Faux Peanut Butter Rice Crispy Treats!

ok, you caught me…..I made theses yesterday morning as well as I mentioned on Facebook and Twitter, but we ate them all.  So I made them again this morning and altered the recipe for pure perfection!

Faux PB Kellogg Treats:

1/2 cup agave nectar {I used the Eat It Up! brand}

2 tbsp coconut oil

dash sea salt

1/2 cup sunflower seeds butter

2 cups quinoa puffs

1 cup dark chocolate {melted}

To Make Bars: Heat a sauce pan over medium heat.  Add in the agave, oil and sea salt.  Stir until it starts to lightly bubble.  Add in sunflower seed butter and mix well.

Remove mixture from heat and stir in quinoa puffs.  Make sure the cereal is completely coated.

Place mixture into a square cake pan and press into 1.5″ thick {takes up about half of my pan}

Melt chocolate and spread over top of bars.

Place in the fridge for 30 minutes before cutting into squares :)

Also from Whole Foods last night we picked up Sushi for our Friends Season 7 Date Night.  Lol, I swear I could watch Friends over and over again….Love it so much!

The sushi from WF’s is so freaking good and fresh! Have you ever had it? The wasabi has a very nice kick to it, which I adore and the avocado is always firm.  Perfect sushi in my eyes and a big 10 from the half Japanese dude that shares it with me :)

    I’ve not ever had quinoa puffs. These sound so good. I love that you admit your reservations, but that you are able to overcome those doubts and move forward with your goals and dreams.

    Love the VLOG- way to open up and share :) The treats look amazing. I love that you used sunflower seed butter (vs. nut butter). Nom Nom. I want to try making it. Honestly- I haven’t baked with Agave. I either use honey (for non vegan treats) or pure maple syrup. I need to give agave a go

    Do I like Friends? HA, more like love Friends. I reference that show so much in life, I find it has many real world applications haha. Those peanut butter rice krispy treats look delicious!

    Those look awesome and so easy to make!! I have never tried quinoa puffs, but now I must pick some up :) Do you think this recipe would still be good if I subbed maple syrup for the agave?

    I bought some quinoa puffs yesterday and I’m about to make these! i just came back to this post to get the recipe and watched your video! Such an inspirational message!!

    Also wanted to ask what program you use for video editing? I’m going to start vlogging but it’s been taking me so long with imovie!
