Well, 30 isn’t nearly as bad as I was told it was going to be. It has been AMAZING!

What better way to ring in my brand new year with a “Kris Day” full of loved ones, coffee, great food and great treats?! My birthday was inspiring, eye opening and busy as I was baking orders, shipping orders and finding time to break at a local coffee shop and then we stopped with the family for dinner.
No better way to ring in 30 with a vegan meal and some serious wine……
Thank you ALL for the amazing birthday wishes yesterday on the blog, facebook and twitter. I am such a sap and tear up on all your comments and your love. The warmth and friendships I have around me is beautiful. Thank you!
My last night at being in my 20′s I wanted something hearty to eat. I wanted something Spicy and Racy to eat. Something that was going to make me feel like I am living life on the edge, and what better way to do that than with Mexican Chili Powder?!
I had a beautiful delicata squash ready to be roasted so I chopped her up nice and started mixing spices…..
*Remember that squash is a wonderful replacement in your diet for grains as it is a healthy, beneficial carb. Never deprive of the carbs, just make sure they are the healthy ones and your waist line will thank you.
Mexican Spiced Squash:
1 delicata squash
1 tsp {heaping} coconut oil
1/4 tsp mexican chili powder
1/4 tsp sea salt
1/4 tsp italian seasoning {or oregano flakes}
To Make Mexican Spiced Squash: Preheat oven to 425.
Chop up the squash into even, bite size pieces. {I leave my peel on when using the delicata squash}
Place the squash into a large mixing bowl and toss with the coconut oil and spices.
Spread spiced squash on a parchment lined cookie sheet and bake for 20 – 30 minutes depending on how “toasty” you like it.
I served mine with a side of Salsa Tossed Quinoa that had sauteed Zucchini and Green Peppers in it.
No Mexican dinner ever goes without the best part – Guacamole.
Done.Like.Dinner.
There was a special treat waiting for me after dinner as well. I ate a petite molten lava brownie from our bakery. When treats are made with wholesome, natural ingredients, its ok to indulge

that quinoa looks amazing… I love squash, but generally have to eat it for lunches or when I’m making something ELSE for Jason… he is not a fan. I made some recently and offered him a bite (which I did NOT think he’d even try!!), and he… LIKED it.

I’ve never had a delicata squash….but I’ve been seeing a bunch of recipes, so I must get one and try it! I love all squash, but right now I am really loving roasted butternut squash with a little olive oil and crushed garlic. I love it roasted until its starting to brown and carmelize in the oven….I could eat it everyday it’s so mouthwatering!

Mine used to be butternut, but I think it’s now spaghetti squash because it’s even more versatile. Love using squash as mexi-meal base!
