Thank you all for the encouraging words on yesterdays post on my Bad Day. They all cheered me up and some of you gave me some really amazing tips to keep in my back pocket for my next crumby day, which I hope won’t happen for a while now.
You know what is so amazing is that we have such strong friendships here through our community and I feel you all know me too well and we know how to help each other in so many ways. Thank you for always being there, I sooooo appreciate you!
I went to bed last night with a tiny bur still in my butt about something. I have been really tearing myself up inside about somethings and I wanted something to sooth my soul in the morning.
I told myself “I will feel better when I wake up”. And I made sure I did by having a tasty, healthy, sweet breakfast waiting for me
My breakfasts have only been consisting of greens and juice lately, and having a Vanilla Coconut Breakfast Pudding was such a nice break.
Vanilla Coconut Breakfast Pudding:
*Make this recipe the night before for an amazing overnight breakfast pudding.
2 tbsp chia seeds
1 tbsp cinnamon
1/4 tsp pumpkin pie spice
1 medjool date {chopped}
3/4 cup vanilla rice milk
1/4 cup shredded coconut
To Make Vanilla Coconut Breakfast Pudding:
Place all ingredients into a bowl and whisk together.
Keep in the fridge over night and enjoy after a nice warm mug of lemon water for breakfast.
This makes a lot of pudding, so I snacked on some later in the morning as well…..hehe
Today is a day for building up Skinny Girl Fat Passion! We shipped out massive orders yesterday for Cookies and now I have a little time to breathe and fix up some online jazzy stuff

I’m a spicy kinda girl, so I really do like the cayenne. I just have to remember to go easy and not get crazy with it or it burns my lips

I am the 21 day cleanse right now so I’m not ‘supposed’ to have solids for breakfast, but I’ll keep this in mind for a detox friendly snack or when I need some comfort food one morning
. I LOVE all things chia and coconut, hehe.

THIS IS BRILLIANT!!!!!! Why have I never, ever, ever, ever thought of doing this? OMG I’m making it for myself tonight for dinner. I’m going to add a bunch of extra stuff because I can never leave a recipe the way it is [I think it's a complex of mine]. I was sooo bummed that I couldn’t have banana’s anymore, and therefore had to stop eating my delicious banana puddings… but you’ve solved my sorrows. Thank you Kris.

Mmm… I do love me some chia! I like to make the ‘gel’ beforehand and then make things with it… so it’s more of a universal creamy instead of pockets of it?

I love chia seeds in my face and body care recipes – I’m not a big fan of the taste and texture for eating though! Congrats on your business and I love the Etsy shop – such a cute logo!!!

Yum! I love chia seeds. I won 2 pounds of them in a blog giveaway last summer and it changed my life forever.
I add them to oats, smoothies, and use as egg replacement in muffins.

Mmmm, I can practically taste the vanilla coconutty goodness! My favorite way to use chia seeds is in overnight oats… which reminds me that I haven’t made overnight oats in far too long!
