Cool Summer Quinoa Salad + Perfect Foods Bar Review

Happy Wednesday!!

I hope you are having a great morning!!  Yesterday morning and this morning I followed Michelle’s Chocolate Steel-Cut Oats idea and it is ROCKING!  Omg, why have I never thought of putting raw cocoa and stevia in my oats before?!  Drool!  It’s like birthday cake for breakfast!

Yesterday was a very relaxed day for me.  I was feeling a tad under the weather and just wanted to relax, so I had lunch outside of Whole Foods with my mom, sipped some Almond Milk Decaf Lattes and then I came home and napped.  Well, I went onto the couch to meditate listening to Clear Radio {on iTunes} and fell asleep.  The nap was not intentional, but felt just right and it was just what my body needed!

Last night Ryan and I met up with some amazing new friends at a local Stabies to chat business and had a lot of laughs and a fabulous connected conversation….I just love meeting new empowering people!!  After our meeting we did a late night run to Whole Foods where we grocery shopped and didn’t sip lattes….or eat muffins.  Did I forget to mention Mom and I munched muffins while out?  Well we did…the Power Muffin!!  Have you ever had it??  Its fab!

Before heading out last night I contemplated making the recipe I am going to share with you today, but instead made the worlds most boring dinners.

Quinoa, Steamed Green Beans, Steamed Broccoli, Sea Salt, and Balsamic Vinegar :|   That’s all!  I was in a rush, but needed some protein today after not feeling so well.  I actually do believe the reason I wasn’t feeling well was due to the 2lbs of cherries I think I ate on Saturday and into Sunday.  OIYE!  What was I thinking?!  Dang sweet, red, delicious cherries.  Dang you.

The recipe I am going to share with you today is AMAZING!  We had it a few nights ago and it so simple and very refreshing.

Cool Summer Quinoa Salad:


2 cups cooked quinoa

1/2 cucumber {diced}

2 cups sugar snap peas {diced}

1 carrot {shredded}

3 cups spinach {chopped}

1/2 tsp sea salt

1/2 tsp dijon mustard

1 tbsp olive oil

1 tbsp balsamic vinegar

1/4 tsp ground cumin

To Make Cool Summer Quinoa Salad: Cook Quinoa and let cool.

Add chopped veggies to cooled quinoa and toss well.

Make dressing with the remaining spices and oil and pour over the dish.  Toss again and place in the fridge until cold.

This is amazing as left overs in a wrap :)   Just sayin’!

I was over at FitLife.tv the other day.  Partly because what Drew share is amazing and the other part is because….well….he is hot!  Just sayin’. They were talking about these bars that they love called Perfect Foods Bar.  I googled, fell in love with their story, and started a relationship with them.  They are soooo freaking kind and cute over there and they beautifully sent me over a love pack full of bars!!

Today I am going to share with you the Peanut Butter Perfect Foods Bar.  Drool.

Hello Peanut Butter Heaven!!  You would NEVER know these bars are packed full of veg!  They taste like you dipped your fist in the PB jar and you are licking away at it.  Gorgeous and Delicious!

These bars are Gluten Free and Preservative Free and are SO FRESH they are advised to stay in the refrigerator.  Doesn’t get any fresher than that, huh?!

There are a lot of wonderful omega’s added into these bars and veggies such as red pepper, alfalfa, celery, kelp, the list goes on and on.  You can read their ingredients here.  Totally swoon worthy if you are looking for a high protein snack!  I must warn you, they are NOT Vegan, but they also did not upset my tummy with my sensitivities :)   YAY!

    I have to say your shot of that bar looks so good – looks like a healthy peanut butter square! That quinoa salad looks amazing too ~ I tried your warm artichoke bean salad a couple of days ago and I LOVED it!     Hey Kris – Your salad had my mouth watering, then the bars had me drooling! I’ve seen these bars at the health food store and have never stopped to try them. I’ll have to try them out. My favorite summer salad is full of all different types of green vegetables: spinach, kal, cucumber, asparagus, cilantro, zuchinni, peas with a green goddess dressing. As for bars, the chocolate chip cookie Larabar is my current fave.

    I’m really liking quinoa right now and eat it with everything so it’s great to see new recipes for it. Can’t wait to try our your salad! And your boring dinner sounds like a simple but yummy way to eat it also so it’s not boring ;o)

    By the way, I’m in the process of being tested for food allergies. How long did it take you to figure out your diet and recover from your own allergy stomach pains?
