Raspberry Chat Masala Dressing

I hope you all had a beautiful weekend??

Our weekend was nice, but BUSY getting our rear into gear for our trip tomorrow.

I did do a quick costco run with the parents to stock up on all the going away necessities {ie. Mary’s Crackers, Nut Butter, Almond Milk, Spinach, and Blackberries} had a nice lunch out and then baked some Flourless Almond Butter Cookies before we all headed up to a big birthday dinner for our uncle Mike on Saturday!

I was able to put work, packing and shopping aside to celebrate Mike’s birthday and stayed up past my bedtime, which of course caused me to sleep in a little too long on Sunday morning…..dang wine.  I tell ya.  Drinking and eating to much is always cured by homemade Carrot Cake Granola topped with chopped Banana and Blackberries!

This was my morning {ahkhmmmm….almost lunch time} food.

I also took my groggy ass down to the gym around 11:45 and rocked out some major legs and cardio, sipping my water humming to BEP the whole time.

With family dinners I have been the “Salad Gal” bringing healthy beasts with me here and there and tickling taste buds with all different kinds of greens.  This family dinner had me stumped.  It could have been the “busy” place I was in with my life which had blocked my creative recipe flow, or it could have been I had already made every salad under the sun for these people before.

After some researching and asking Angela for some fab recipes, I came to the conclusion that we needed Raspberries in our salad.  I wanted something that was fresh, paired nice with barbecued salmon, veggies and potatoes, we came up with this glorious salad…

Raspberry Chat Masala Dressing

{recipe modified from Everyday Indian}

1 c  Frozen Raspberries, thawed

2 Tbsp  Balsamic Vinegar

1 Tsp  Grated Garlic

1 Tsp Chat Masala (see below...)

1/2 Tsp Sea Salt

1/2 Tsp  Pepper

1/8 c Flax Seed Oil

1/8 c EEVO

Put the ingredients in a deep bowl and whisk until the dressing is well
combined.  This will keep in a glass jar in the refrigerator for up to
5 days.

Chat Masala

1 TbspMango Powder

1 Tbsp Ground Cumin

1 Tbsp Ground Coriander

1 Tsp Pomegranate Powder

1/4 Tsp Ground Dried Ginger

1/4 Tsp  Salt

1/4 Tsp  Pepper

Combine all ingredients in a bowl and mix well.  Store in an airtight container
in a cool place for up to 3 months.



This dressing was so "Fresh" tasting and paired beautifully with baby  romaine,
cherry tomates and chopped peppers :)   Highly recommend  fitting this salad into
the last few weeks of summer when you can!

    I’m a Costco lovah- but I’m slightly envious of the fact that yours carries Mary’s Crackers!! That is too good to be true.

    My favorite dressing at the moment is actually a simple balsamic vinegar or balsamic vinaigrette. So easy, yet so delectable :)

    Where do you get all those fun ingredients?

    I usually bring kebabs to BBQs. Also I noticed Costco has salmon kebabs and that just sounds so yummy to me!! I’ll have to get them next time!!

    Im so jealous of your costco we dont have one here and sams club is not the same…. & that granola looks TO DIE FOR incredible i’d run out of bed for that!

    Hey Kris! I’ve been avoiding Costco for the Summer since it’s just me at home right now. I love everything that they have, but sometimes it goes bad before I can eat it all.
