Almond Butter and Jam Rice Crispy Treats

Waking up the last few days has been a bit difficult for me.  Not going to lie, I think the time change we had last weekend really took a toll on me.  Has anyone else felt this??

You know how people say “only if I had a work from home job would the struggles go away”…let me tell you, the snooze button still gets hit here while running a business and the other morning I actually felt really low.  This is something I haven’t felt in a long time since I left the corporate world.  I woke up feeling “UGH” and Icky.

I sat with that feeling for a while and tried to analyze why this is happening and what I came to realize is that I’m changing so much and its happening fast.  I’m blossoming new careers, I’m changing how I deal with people and how I let them interact with me.  I have a strong intuition when I’m in people’s space and I’m kinda all F&%$ed up!

Normally I feel like I’m peaches and cream around here, but the last few days I feel like a muddy old shoe that’s been taken off into a dirty pile of garbage.  There, that’s how I feel.

I’m not lacking self love, I actually think its quite opposite, I kind of feel like I’m in a lot of power that I don’t know how to handle it and the universe is testing me and pushing me to see if I’ll break or if the “old” things will push me over the edge.  Well guess what Universe, I’m here and I’m sturdy!

What I have been playing with over the last day was Becoming an Icon.  Now, this doesn’t mean I want to be Jennifer Aniston

{Well…I’ve done that once ;) }

or Marilyn Monroe….but I think we all have qualities that set us into our own Icon.  We all have something buried within us that is passionate and allows our true essence and “glow” to happen.  What’s mine??

I’ve been open to receiving this into my life.  Is it happening fast?  HECK NO!  Hence, the struggles and muddy shoes.  Poo.

I kind of narrowed it down to Grocery Shopping and Being by the Beach that allows me to be in my full flow and allows new ideas to come to me.  From here, I will decided how I can be and Icon in this world.  We all have the right to be one.  It could mean you are the best baker in your town…you don’t need to be Oprah here dolls, you just need to be YOU!

Anyways, because of my funky mood I needed  a sweet.  I actually needed a lot of sweets yesterday.  So that’s what I did.

I needed a bit of “home” in my life and to me home was always Rice Crispy Treats. I liked the marshmallow ones, my dad loved the peanut butter ones so we would alternate when mom felt like snap crackle and poppin’. I was always in heaven.

Yesterday I didn’t have marshmallows, although they would have been grand, but I did have a whole large tub of Almond Butter from Costco I was ready to dip into.

Almond Butter and Jam Rice Crispy Treats


2 cups Rice Cereal {I used the Brown Rice Crisps Cereal by Whole Foods, 365 Brand}

1/4 cup Almond Butter

1/4 cup Honey

3 tbsp Strawberry Jam

To Make Almond Butter and Jam Rice Crispy Treats: In a large bowl pour in the cereal.

In a small sauce pan over medium heat, heat up the honey and almond butter until smooth.

Pour the almond butter mixture into the bowl with the cereal and add in the jam.  Stir until coated well.

Pour into a 9″ round cake pan or a square pan and place in the fridge for 1 hour before cutting.

These are FAB with almond milk….just sayin ;)

    Happy Wednesday! Sending lots of love your way and I hope your feeling more like your ‘peaches n cream’ self! :) I think we all have those days..ugh days…and best to go with the flow and give yourself lots of love, go for walks outside, do yoga, etc….typically you will feel better later in the day or by the morning…xoxo

    Great recipe! Rice Krispies just came out with a gluten free, whole wheat version. Have you seen them?

    Like you, being by the beach makes me feel better on my “ugh” days. However, it’s getting colder and colder so I always have to wear tons of layers to stay warm. You’ll feel like you’re lovely self in no time. :)

    I love the beach, but I also know I’m super whinny in the cold…so probably shouldn’t go there today. Whole Foods coffee made my day brighter :)

    I have been feeling this way A LOT lately. Stuck in a bit of a mind rut when I have so much good stuff on the horizon and I need to shake out of it. I’ve been trying to take it a little easy and put less pressure on myself socially while I sort it all out – hibernating always revives me a bit. Your talk helped SO much too, I can’t wait to continue our sessions!

    JAM?!?! I never would have thought to put jam into rice krispie squares! PB & J krispies! love it!

    I get in ruts, too, especially with recipes. I find that sometimes I’m being too hard on myself. I get myself out of the house, go do something for a few hours, and it usually helps re-inspire me. Yoga helps, too :D

    Ahh yes, with recipes, I find I go through this too and that is when I put myself in a grocery store, mid day when the crowds are gone and I can wonder….makes me happy. Then all the creative juices start flowing :)

    Aah, I’m so sorry you’ve been in a funk…we all have those days, and periods, I think – but I love how you;ve looked so closely and honestly at your life and are moving forwards, with delicious healthy sweets in hand, lol! :-P Being part of a community helps me find my essence…I love engaging with people and interacting with people as part of my job, and contributing positively to the lives of others is so so satisfying for me – I really feel connected to myself when I’m doing that.     Hi! I’m your newest follower on twitter and soon your blog! I bought brown rice puffs just like these ones a few weeks ago and I tried them plain with just milk and ughh I can’t do it! haha. I’m so glad I found a recipe that uses them!! Making these soon!
