Well it’s Friday, so that’s pretty rad, huh??
Last night I did some shopping sister time with Michelle…although Michelle did all the shopping and I did most of the sisterly “yes” or “no” for items it was still a blast!
There’s a funny thing Michelle is known for through the family and that is her beetle juice pants. You see, michelle was even into fashion at a young age. She loved her black and white stripped tights. So much so they had a name “beetle juice pants” and she wore them often. The days were sad when she grew out of those ol pants……
But to our surprise they now make the in adult sizes 17 years later.
You out did yourself H&M!

So today we have a nice treat. A treat that will allow you to cool down if you’re in that big heat wave! I’m not in heat, but I still can eat these cool treats and enjoy every last nibble.
Dairy Free Mocha Peanut Ice Cream Sandwich
*Makes 2 Sandwiches
Cookie:
Follow the recipe for the Lean Mean Brownies but drop tablespoon amounts of batter onto a parchment lined cookie sheet.
Bake for 15-20 minutes or until browned.
Cool before using.
Mocha Peanut Ice Cream:
2 tbsp peanuts
2 tbsp dark chocolate chips
1/2 tsp coffee
6 dates
1/4 tsp vanilla
2 tbsp coconut
1 frozen banana
1/2 cup coconut milk {light}
6 drops liquid stevia
To Make Mocha Peanut Ice Cream: In a blender or food processor combine the nuts, dates, vanilla, chocolate and coffee and pulse until combined.
Add in the frozen banana, coconut milk and stevia.
Pour into molds or into parchment lined muffin tins and top with a cookie.
Freeze for 2 hours and dive in
I really loved that these tasted very healthy and not overly “sugary”. They are perfect for a warm afternoon on the patio!
