How are ya?
Well I made cookies. Yes, it’s been sometime since I baked a treat due to a couple of reasons. 1. It’s hotter than a beaver in this condo so turning the oven on kills me slowly. 2. I can’t have baked goods in this kitchen or I eat them all….which I’ve pretty much have done with these already.
If these were Oreos, my hard work on toning this bod would have gone all the way down the crap creek, but the good news is, I am choosing healthier, high protein, sugar free options. But you already know, this is how I’ve been rollin’
Except when mom and dad and I meet up for joe and we eat these sugary almond cookies from Whole Foods. Dang these are fab!
Yes, they are dipped in dark on either ends. There is a cookie god.
I’ll tell you one thing, my cookies for you today are not chocolate dipped or sugary sweet, but they do satisfy that feeling in your teeth to want to bite into a fluffy cookie, but without the grainy guilt.

Guilt Free Cookies.
I Love Coconut and Chocolate together….yum! I wanted a smooth cookie {not crunchy nuts} that were super soft and chewy when warm. Delish!
Almond Coconut Chip Cookies {Grain Free, High Protein, Sugar Free}:
6 scoops Vi Shape Shake Mix (14 tbsp vanilla protein powder)
1/2 cup Shredded Coconut
1/2 tsp Baking Powder
1/4 tsp Sea Salt
1/4 cup Mini Chocolate Chips
1 cup Almond Butter
2 Egg Whites
1/4 cup Almond Milk
10 drops Liquid Stevia
To Make Almond Coconut Chip Cookies: preheat oven to 350.
In a large bowl mix together all the dry ingredients.
In a separate bowl mix together the wet and combine the two, folding until well mixed.
Drop tablespoon amounts of batter onto a parchment lined cookie sheet and bake for 15-18 min or until golden brown!
Very tasty and filling…..I’m in love….
