Did you have a fab weekend? Over here was full of wine, evenings out at Starbucks, lots of Green and some new eats!
Who has tried these Dr. Praeger’s {preggers?!} Veggie Burgers?
I rocked mine with a mondo salad for dinner last night! Gotta keep it lean and green around here!
The burger was just “ok”. I found it to be greasy and taste a bit like a chinese food dish to me….interesting, I know
Sooo today is the BIG REVEAL of what we made for the First Foodie Showdown!!
If you’re participating this week, you’ll remember you had these ingredients to fuze together into something GREAT!
I thought long and hard on what I wanted to make. All of these ingredients are favorites of mine and I mapped out a couple options, but in the end, I created a Chocolate Nectarine Macadamia Tart!
This sweet jane is Gluten Free and pretty dang tasty! I’ve been sneaking bites here and there since I made it on Sunday. It’s so freaking good!

Chocolate Nectarine Macadamia Tart:
*Makes an 5″ Tart
Crust:
1.5 cup Chocolate Cookie Crumbs {I used Pamela’s Gluten Free Cookies}
1/2 bar Dark Chocolate {Endangered Species 88% Dark}
1.5 tbsp Coconut Oil
Filling:
2 Nectarines {Chopped}
1/2 cup Macadamia Nuts
2.5 tbsp Vanilla Protein Powder {I used Vi Shape Shake Mix}
10 drops Liquid Stevia
1 tbsp Coconut Oil
Topping:
Crushed Macadamia Nuts
Chocolate Drizzle {melted dark chocolate with a bit of coconut oil}
To Make This Chocolate Nectarine Macadamia Tart:
In a food processor pulse the cookies until fine.
In a sauce pan heat the coconut oil and dark chocolate until melted and smooth. Pour the cookie crumbs into the sauce pan with the melted chocolate mixture and stir until well combined.
Pour crust mixture into your tart pan {you can make mini tarts out of this as well!}.
Press into a crust and place in the freezer for 30 minutes.
In a blender place all of the filling ingredient and pulse until smooth.
After the crust is hard, add the filling and top with the chopped nuts and chocolate drizzle. Place in the fridge for 2 hours before serving.
Note, Dolls, this is not a “Healthy” treat as I usually make, this is a true Cheat Treat! The cookie base is pretty dang calorie dense, I’m sure….but it feels great to indulge some, doesn’t it??

That tart looks great! I have tried a few of the Dr. Praegers veggie burgers – I have found them all to be really mushy
I don’t buy them any more…

Hi there!~I was wondering if there is a substitute for the protein powder? Plus, FYI…Stevia, while all natural, is a HUGE cause for UTIs, even in small doses. So even if you just use it in your tea, and you’re experiencing (repeated) bladder infections, ladies…now you know!
