Day 3: Frost Kissed Gingerbread Bites

It’s Day 3 of 12 Days To A Glam Christmas and it’s Treat Friday!!

I’m so blessed this morning to be curled up with my coffee and all my Christmas lights blazing.

How was your Forgiveness yesterday?  Ahhhhhh, I felt like a free flying bird last night after I went through my rope exercise and it’s fab!  If you missed the post yesterday, “Let Forgiveness Be Merry!” we dropped a lot of F’Bombs and set our pressure within back to normal by forgiving the grudges we’ve been holding, the ego and the negative feeling we might have been throwing at ourselves.

So powerful, huh?

Today however is something you can bring to your next holiday party!  You can show your loved ones that treats do not need to be heavy with butters, oils and dusted with absurd about of sugars, we can have our traditional treats, just a bit healthier!

Frost Kissed Gingerbread Bites are the perfect little 3 bite goodie that satisfies your spirit and still leaves you feeling light!

When I think of my favorite holiday treat, it is for sure my nana’s German Pfeffernusse {translated to “Pepper Nuts” lol} it’s small, round, spicy and delicious.  The spices remind me of gingerbread, which I love!  When I was young my mom would make our gingerbread house from scratch, baking all the pieces and when the “door” or the “trees” had a bubble or imperfection, we’d get to nibble them!  I would love sitting by the mantle where the house lived and could smell the sweet icing and spice when the light was lit in the sugary house…..

Childhood memories of Christmas are so magical.

The point of this story is today I wanted to share with you a healthy version of a holiday favorite, gingerbread!

Frost Kissed Gingerbread Bites:

*Makes 8 bites

1/2 cup Spelt Flour

1/2 cup Vanilla Protein Powder {Vi Shape Shake Mix}

1 tsp Pumpkin Spice

1/8 tsp Cinnamon

1/4 tsp Salt

1/2 tsp Baking Soda

1 Egg White

2 tbsp Coconut Oil {melted}

1.5 tbsp Molasses

1/4 cup Honey

2 tsp Crushed Candy Cane {for the Frost}

8 Dark Chocolate Kisses {or large chocolate chips}

To Make Frost Kissed Gingerbread Bites: Preheat oven to 350.

In a large bowl combine the dry ingredients and whisk together to remove any lumps in the flour.

In a small bowl whisk the wet ingredients.

Add the wet to the dry and fold together until well combined.

Fill 8 muffin liners {I did not bake these in a muffin tin, I baked them on a cookie sheet, in paper muffin liners}

Bake for 15 minutes or until golden brown.

As soon as the bites are baked, remove from the oven and top with a chocolate piece and some “frost”

These are perfectly sweet and totally Christmas!
