The story behind these amazing cookies is, I baked them late on the 23rd to bring to Ryan’s families dinner on the 25th to show my love and gratitude…from the moment these soft, chocolate cookies wafted through our condo, Ryan was on them trying to catch bites here and there. “ohhh no! You ate one??” “2.” “Noooooo they are for your dad, dang it!”. In his defense, they are alluring.
You know the way the holidays went down, my families for dinner on the 24th, home, brunch back with my family Christmas morning, luggage and bags full of gifts and I forgot the dang cookies at home after driving a long time to get to the house the cookies should have been at, there was no way of turning back.
We’ve been eating cookies till the cows come home and we had to sweat them all out late last night!
Heavy Weights always makes the fat cry! I read a cute t-shirt the other day, “I don’t sweat, I sparkle” amen.
So back to these crack cookies….
Double Chocolate Spelt Cookies:
(these were my last 4)
*makes 15 cookies
1/4 cup coconut oil (softened)
1/3 & 2 tbsp organic cane sugar
1 egg white
1/2 tsp vanilla
1/2 cup & 2 tbsp spelt flour
3 tbsp & 1 tsp cocoa powder
1/4 tsp baking soda
1/8 tsp sea salt
1/4 cup chocolate chips (I used chopped 70% dark chocolate)
To Make Double Chocolate Spelt Cookies: preheat oven to 350.
Mix all ingredients together, fold in chocolate chips.
Drop tablespoon balls of dough onto parchment lines cookie sheet.
Bake for 8-10 minutes.
They are so chewy, delicious and addictive.
