Monday….how I love you. I have so many fabulous things happening today and I’m ready to rock and roll!
The weekend was awesome. It was birthday fun…….awesome.
My family took me for dinner at my favorite seafood place and we totally over indulged. Wine. Check. Chocolate Mousse Cake. Check. Happy Birthday to me!
I was given such a gorgeous blouse from my mom, dad and Michelle! Isn’t it gorgeous?
I’m madly in love with the color. This is the time I’m ready for spring to come so I can see the sunshine, smell the flowers and wear BIGHT colors!
Last night I needed a treat. I think I started something with the mousse cake on Saturday night. Doh.
Cinnamon Chocolate Almond Cups:
*makes 2 cups
Filling:
8 almonds
2 pieces of dark chocolate (optional)
1 tbsp almond butter
1 tsp honey
Cinnamon Chocolate:
1 tsp coconut oil
1.5 tbsp cocoa powder
5 drops stevia
1/4 tsp cinnamon
To Make Cups: in muffin liners place 4 almonds and chocolate in each.
Heat almond butter and honey. Split the almond butter mixture in each cup on top of the almonds.
Top with cinnamon chocolate and freeze.
These are perfect as a healthy valentines day treat, trust me. I shared mine with my valentine!
Coffee time! Busy day ahead of me and I need to get fueled up.
