Grain Free Lemon Blueberry Cookies

It’s Friday, baby!!!

The treats I have for you today I made on Wednesday…..we’ve eaten all of them except for a couple.  These cookies taste like spring time in every bite, so you’ll understand why they disappear so quickly!

I am such a chocolate freak, but the other day I was craving FRESH bites of sunshine and when I think of sunshine, I think of lemon!  Luckily I’ve been back on the kick of sipping sour lemons in the a.m. after my coffee {as per my sister Michelle suggested I do} and a whole bag of glowing yellow screamed at me to use in a cookie recipe.  Thank you lemons for inspiring me in the kitchen!

Grain Free Lemon Blueberry Cookies:


2 cups Almond Flour

3 packets Stevia

1/4 tsp Sea Salt

1/2 tsp Baking Soda

rind of 1 lemon

3.5 tbsp Coconut Oil {melted}

1 tbsp Lemon Juice

1 Egg White

1/2 tsp Vanilla

Frozen Blueberries for the middle

To Make Grain Free Lemon Blueberry Cookies: Preheat oven to 350.

Mix all dry ingredients together with a whisk in a medium mixing bowl.

Whisk all the wet ingredients together, including the rind of the lemon.  Add the wet to the dry, fold together.

Drop tablespoon sized cookies onto a parchment lined sheet.  Add 1 frozen blueberry to each cookie.

Bake for 15 minutes or until golden brown.

These are little drops of heaven!  They are grain free, paleo, and super tasty!

    Just made these . They are very delicious although a little more like mini non sweetened muffins . I wanted it more sweet like a cookie so on the 2nd batch I added low glycemic honey instead of Stevia Waaaaay more cookieish . Very good recipe thank you !
