Pecan Caramel Clusters

I did!  It was full and fun!  Here is my weekend re-cap :)

Saturday was jammed packed helping a friend move quickly out of there place and then it was off to the grocery store and home to make some treats before we headed to my aunt and uncles for dinner.

I made the best version of Turtles I have ever had. I think they are actually way more tasty than the real ones  and they are healthy and vegan!  I found the recipe on my favourite site to find dessertsElanaspantry.com

Elana uses macadamia nuts to make the original.  All I had was pecans, so they turned into Turtles!

I am a chocoholic…..I admit it.  I do not eat it daily, but when I do eat it I savour it…..and love ever second of the lingering taste

Pecan Caramel Clusters:

½ cup roasted almond butter 
½ cup agave
1 tablespoon vanilla 
½ tsp sea salt 
1 cup pecans
1 cup dark chocolate 73%

Directions:

  1. Combine almond butter and agave in a medium saucepan over low heat
  2. Stir in vanilla and salt, then add pecans
  3. Allow mixture to cool a few minutes
  4. Drop mixture by the tablespoonful onto a parchment lined dish
  5. Place dish in freezer for 10 minutes
  6. Melt chocolate in a medium saucepan over lowest heat possible, stirring continuously to avoid scorching
  7. Remove dish from freezer and drop chocolate over each caramel cluster, spreading gently to coat
  8. Store macadamia caramel clusters in freezer
  9. Remove from freezer just before serving (if left out for long they become quite messy)

Of course yesterday the city with Buzzing with Hockey Fever and it was so amazing to watch and feel the energy here!  When Canada won the game the streets were going nuts and people were screaming and yelling and letting off fireworks, it was such a wonderful experience to be a part of.  It warmed my heart to be the host to this years Olympics and I can honestly say I am sad they are gone!

Today I went over and met my friend Sandi’s new baby girl – Anna- Sofia! She is the cutest little thing, with the most perfect shaped head and big eyes!  Holding a baby feels so good and makes your heart warm :)

A few of my friends are now having there own little families and I think it is so cute!

After my visit I cam home and made a Caffeine, dairy free latte……well not really, but it tasted good.  It was Teeccino, with warmed Rice milk and cinnamon = Delish!

    What a super cute outfit! I love GAP’s great designs for kids. I bought Maya an entirely apple ensemble last year and she loved it.

    I was 29 when I had Maya and I’m glad I waited so long. Everybody was on our case because we’d already been married 5 years but we didn’t give in! Having kids changes everything so it makes sense to wait as long as you need to!

    Does it really taste caramelly??? They look really fantastic!

    I am so ready for babies right now! But I am going back to school in September for 10 months, so it will have to wait!! I’m SO ready to be a mama though!! Especially lately!!

    I have been married almost 4 years and I am almost 29 and no babies for us. We are actually on the fence about whether or not to have children. I know we will figure it out and make the decision that is best for us. But a lot of my friend are having children and it is fun being around them and their new family additions!! :)

    This question keeps popping up around the bloggosphere these days.

    I have to say… hmmmm. More then a set time, there’s a set of things I’d like to accomplish before I have any children. First, find the right guy, finish university, get a good job, have a stable income… that sort of thing. I’m too young! lol. ;)

  8. Kris- I gotta tell ya- If I hadn’t given up chocolate for March (part of NY resolution) I would be making those turtles NOW! They look delicious!!

    My fiance & I are getting married 10/23/10 and would like to wait until after to have kids, but aren’t preventing, so it could happen anytime. We aren’t sure if we will be able to, so would rather just leave it to fate.

    I made “turtles” a few mos ago and posted about them… so easy and good, I didnt even know elena had a recipe for them..cool. You did a great job on yours!!!!

    Baby. Never wanted one. Hit 28 and had to be pregnant like yesterday. And 2mos later, I was. The rest is history. Do it sooner rather than later. You’ll be happy you did :)

    I heard that the bridges in Van had to be shut down due to so much pedestrian traffic..that’s crazy and pretty cool! lol! I’m sad I wasn’t down there. Thank your posting your “turtles”..my mouth is watering! And babies? Well..we have been married for just over and year and the family is patiently waiting but we both want to get our careers established first. My friends and family are having babies like mad right now but the urge to have my own hasn’t hit…yet!

    Oh, I wish you could hand me one of those turtles through the computer screen! ;)

    I really want to have my first baby by the time I’m 30. I’d be fine starting a little earlier, too, but I’m really hoping that by waiting 3 more years, I won’t be living in LA when I get pregnant! Cross your fingers for me!

    Such a cute outfit you found! My sister-in-law is giving birth to a baby girl any day now, and I’m totally into looking at little girl clothes now!! So fun! :D

    Yum! Those turtles definitely look good. I want to try and make those..

    I’m nowhere near ready to have a baby but I want to be done by the time I’m 30-31. I figure that since I only want two and if I start around 27-28, I’m good to go. Then again, that all depends if I’ve found the right guy and all. ;)

    I love baby clothes. Shopping for them makes me happy! Pretty much every girl from my high school has had a baby by now. Its a little crazy actually. Blame it on the area in which we grew up! lol
    It makes me feel behind though. I feel like Im MEANT to have kids. Im not ready to have them now (unless my boyfriend all of a sudden gets rich) but I want to have kids before I turn 30. Ideally I’d have my first around 27 or 28 but thats creeping up on me, so I really dont know when it will happen.

    Oooooh my GOODNESS. Kris! I love – no adore – this little outfit. I can just spend hours looking at baby clothes and items and all the new things that have come out on the market for mommies. I definitely have NO plans on having one any time soon but kids just absolutely light up my world so it will be a blessing when I do.
