Raw Breakfast Muffins

Hello Everyone!!
Wow! I have been away from my blog (my love) for almost 2 days now!
I have been up to my eyeballs in things to do and things to get done so I needed to step away and take care of business for a couple days
I am back now!
This morning was a glorious morn as I woke up to Raw Goodness setting in the fridge. Mornings are great when all you need to do is open the door to get healthy eats.
Everyone knows the famous breakfast rollin’ around this blogger community – The Breakfast Cookie – and yes she is yummy and healthy, but I wanted to step it up just one notch.
I needed to be able to transport my breakfast easily with me on meetings this morning and didn’t want to be bothered with spoons and tuppers, so I made the Raw Breakfast Muffin!


Raw Breakfast Muffin Lovin’
*This recipe makes for 3 healthy breakfast muffins
1 banana – mashed
3/4 cup oats
2 – 3 tbsp raw almond butter
1/8 cup hemp milk (or milk of choice)
1/2 tsp cinnamon
1/2 scoop vanilla chai vega powder (this makes it sweet and yummy!)
Mash all together and place in muffin liners – I placed mine in the muffin tins as well to keep shape while “stiffening” up.
I then sprinkled with unsweetened coconut. You can jazz them up with whatever toppings you like.
In the morning after they have “set” they are stiff and easily transportable – great, healthy, breakfast or snack.

Wednesday’s Vegan Food Outline

Hey Everyone!
Today was a jammed packed day of work and eats, so I figured I would outline my day for you all as I have been asked recently by a few lovely readers what I eat daily. After my eliptical workout this morning and consuming a lot of clean water, this is what the day looked like:
This morning the Green’s attacked and Ryan and I both had our Ghetto Greens:

2 scoops vanilla chai vega powder
1/2 banana
1/2 apple
1 cup almond milk
2 cups water
2 raw kale leaves chopped
bit of cinnamon
Delicious!! I look forward to my breakfast every morning, seriously, I love this stuff!
After Ryan left for the office, I had a couple cookies…..yes I did.

But they are healthy and I love them! I also took some of the readers advice and added cinnamon to my morning joe. It was great!! I like my coffee black, but I bet this tastes extra fantastic with almond milk in the coffee with the cinnamon.
I was still hungry so I made some oatmeal. I normally don’t eat oatmeal daily as I find it a bit too acid for me but today was definitely an oatmeal day and again out came the cinnamon, and a tsp of almond butter! Love Raw Almond butter very much.

A cup of chamomile tea also accompanied this Royal D bowl full of oats.
There were a lot of emails flying today and phone calls – before I knew it 2 pm was here and I hadn’t had my salad! So I quickly assembled one of these:

Also placed a bowl of Mary’s crackers next to the greens for grazing….ahhh they are so good!
Water, water, water! Of course I had a lot of water!!!
I am now at my parents place waiting for dinner, I seem to invite myself over for dinner when Ryan is going to be out late….. tonight is Brown Rice Pasta with Sundried tomatoes and Veggies!

Comfy Comfort Food

Happy Wednesday Everyone!
Last night I met up with my good friends Sandi and Melissa! We haven’t seen each other in a “coons age” as my nana would say
We have been friends since grade 9 and it is still so nice that we have the ability to connect like we do. We will do it again soon ladies!!!
Today is November 11th and well, summer is officially over here in Vancity. I am loving that other parts of the world are still experiencing the sun and heat!! If that is you, please let me know if you have a spare room for me
For the rest of us in full fall we are curling up with our blankets and books in front of the fireplace for coziness and warmth! This condo does not offer the same effect as we an electrical fireplace and that thing does not give off the heat that I need!!! But I still enjoy the fall living room, do you know what I mean? Once fall hits everything in your living room seems snugglier….
On these chilly days I prefer warm food to raw food even though I will still have my green smoothie in the morning and my salad for lunch, snacks and dinner are always cooked. I crave carbs in crumby weather!! I should be reaching for celery sticks or fennel, but instead I reach for cookies, sweet taters, and squash! Still all good for me, but still I feel better when I eat more greens etc.
One of my fave comfort foods is oatmeal! So every time I have a bowl of oats I will jazz it up in different ways. I don’t eat these bad bowls for breakfast I normally eat them for a snack. This bowl I had the other day was dressed with coconut, cinnamon, a little drizzle of agave and a spoon
I heart oats and cinnamon together!! I might have some right now

Today is Hudson’s birthday, my little poopy dog is 2 years old! LOL, we are having the family over for some cookies and coffee and maybe a little Wii for the party! We are crazy pooch owners, I know
He is a part of our family!
Look at when he was just a lil’ pup!

How do you jazz up your Oatmeal?? I really need some more ideas!!

Dark Deep Secrets of Greens!

Happy Tuesday All,
Last night was a late night and I was away from the computer – I actually felt a part of me was missing? Anyone else feel this when they are away from their blogs, community of friends and connections on twitter? I sure did!
Raise of hands – who loves consuming Fresh, Dark, Greens? I do and I know so many of you do too but I can bet this wasn’t always the case now was it? For myself I didn’t really appreciate the Dark Deep Green until a few years ago when I really understood the benefits of them. Yea sometimes I prefer them cooked to raw, but they are a staple ingredient in the morning bevy
Like you all know my breakfast is a big fresh smoothie which always consists of 1/2 an Apple, 1/2 frozen ninner, 3 big black kale leaves, 2 scoops vanilla chai Vega (sometimes another flavor) and good clean water (super important to make sure it is good water so you absorb the nutrients). On certain occasions I might throw in frozen berries, goji berries, nut milk or spices but the staples are always there!
Smoothie Example:

My fave Green is Kale and I really heart Black Kale! I use it as wraps for my nut “cheeses”, I eat it raw in salads, add it to soups, rice dishes you name it! Ryan always asked me why I eat rabbit food? And finally since he has been on the detox and is staying away from all processed foods and meats for 3 more months he finally understands and appreciates the greens

Kale – The Green God
Did you know one cup of cooked kale with no added salt contains 2.5 grams protein and 2.6 grams fiber! I probably eat 4 cups of kale a day and I really notice a difference in my energy when I miss my Kale.
It also has all of these wonderful minerals:
Potassium – 296 mg
Phosphorus – 36 mg
Magnesium – 23 mg
Calcium – 94 mg
Sodium – 30 mg
Iron – 1.17 mg
Manganese – .541 mg
Selenium – 1.2 mg
Vitamin K- 1062 mcg Also contains small amounts of copper and zinc.
And Vits!
Vitamin A – 17,101 IU
Vitamin C – 53.3 mg
Niacin – .65 mg
Vitamin B1 (thiamine) – 0.069 mg
Vitamin B2 (riboflavin) – 0.091 mg
Vitamin B6 – 0.179 mg
Folate- 17 mcg
Pantothenic Acid – 0.064 mg
Vitamin K- 1062 mcg
Vitamin E – 1.1 mg
I researched other ways for me to get calcium since I knew I had an allergy to dairyand I found that dark leafy greens especially Kale has wonderful amounts of calcium which are not high in oxalate and is absorbed as well or better than the calcium from cow’s milk! Go figure!! Isn’t mother nature be-a-u-tiful?!
Calcium is mucho important for us ladies and it eases insomnia and helps regulate the passage of nutrients through cell walls. Without calcium, your muscles wouldn’t contract correctly, your blood wouldn’t clot and your nerves wouldn’t carry messages……Could you imagine – no thoughts?! I would die, I love day dreaming!
If you don’t get enough calcium from the food you eat, your body automatically takes the calcium needed from your bones. If your body continues to break down more bone than it replaces and rebuilds over a period of years in order to get sufficient calcium, your bones will become weak, brittle and break very easily. Plus you could get a hunch back
A deficiency in Calcium may result in muscle spasms and cramps and I know this is huge issue for bodybuilders when they drink distilled water! Distilled water will leach all the minerals and nutrients from your bones, ligaments and skin. I will do a water post in a couple days!
So I would like to challenge everyone to UP your Greens intake! I read interesting posts on Balanceisbeauty.ca and Ohsheglows.com where these lovely gals say they are adding 1 extra green drink into there daily diet to feel better, continue glowing and they will be boosting their bods with nutrients! I am also adding 1 extra green drink into my daily diet routine and will have it most likely after dinner when I really feel like snacking
Dr.Oz also states he has a green drink in the morning and says it will turn back time and we all love Dr. OZ
Greens keep you young, healthy and vibrant!
Ahhhh whole foods you will love me I will be the girl with bunches of kale hugged in my arms first thing in the a.m.!

Pumpkin Vegan Scones

Happy November 1st All!
Did everyone have a wonderful Halloween? I did! Ryan and I went to Bucks (starbucks) and I had my very first coffee after my month away detoxing and it was soooo good. But I realized I don’t need it all the time – I did feel jittery after drinking it. Does anyone have proof that coffee is somewhat good for us? I am looking for something to make me feel better because I do love the taste of it
Me taking my First Sip after a Month Away:

The Verdict – GOOD! (see all of those boxes behind me? Christmas is in those boxes! Starbucks will be in the season on Nov 3!)

We were heading to my ‘Rents house for some Halloween Dins and handing out candy to all the little kiddies!! I made nice Indian dish – NOT. Oh my….I almost killed everyone with the spice level in this dish. I didn’t not post pics or will post the recipe because I am ashamed……hehe. Seriously organic dried chilies have some Kick that I don’t want to try for a long time now!
Moving on – I did make these fantastic scones last night for dessert!! I used to make this batter for muffins and just tweaked it a bit and made scones out of it. I noticed that Angela on OhSheGlows.com made her scones look like spooky faces and thought that was a great way to jazz up dessert for the festivities last night! I don’t eat wheat, so my baking is normally done with almond flour. It is so easy to use and makes every baked item sweet and delish!
Here they are! Meet the scary scones……



Vegan Pumpkin Scones:
1 1/2 cups Oat Flour
1 cup Almond Flour
1/2 cup date paste (soak dates in warm water and blend in Food Processor)
1 flax egg (1 tbs flax seeds & 3 tbs warm water – I used some of the date soaking water for extra flavor)
1/2 cup coconut oil (melted)
1 – 2 tbs Agave Nectar (depending on sweetness level)
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp sea salt
1 cup Pumpkin (I used canned this time, But I used fresh in the past)
2 – 3 tsp Cinnamon (I used 3 because I love Cin!)
2 -3 tsp Pumpkin Pie Spice
1 tsp vanilla
-Preheat oven to 350
-Place the dates in a bowl and add warm water - just enough cover them. Let sit while preparing the other ingredients.
-Mix the flax seeds and warm water and set aside. (I used some of the warm date water to mix my flax egg to keep the flavor. After the dates have soaked for a few min, take some of the water out with a spoon and mix the flax egg!)
-Mix all the dry ingredients together in a bowl. I had to make my flours so I placed oats in the coffee grinder and made them into a fine flour (Super easy!) I also did this with the almonds ![]()
-Melt the coconut oil for a few seconds in the microwave.
-Place the soaked dates with some of the dated soaking water into the Food Processor and blend until smooth.
-Mix the date “paste” with the melted coconut oil, add the agave nectar, and vanilla
-Then mix in the flax egg to the wet mixture.
-Add the dry and wet together and mix well, but do not over mix. My batter always turns out fluffy, so it is not hard to mix up!
-Use a spoon to drop the batter onto baking sheets. I make usually 6 scones with this batter and 8 muffins with this recipe.
-Decorate the scones up if you would like!
-Bake for 20 min
Voila! Vegan Pumpkin Scones!!! I doubled the above recipe to make 13 scones for the fam
When I make muffins out of this batter I have glazed them with a agave and coconut oil “wash” and that tasted amazing too!

The Devil in Brown Fur

Happy Halloween Everyone!!
It was a mighty goulish night here in the Vancity last night -Tons of Rain & Wind! This morning it is clear skies and calm….so beautiful! I was super excited to wake up this morning because I made my first breakfast cookie ever! YES I can eat more food now that my detox is all over – ALL OVER – WOOOT! I do have another “maintenance” appointment in the next couple weeks, but that’s ok I don’t need to follow the strict diet any longer.
So I made a breakfast cookie and enjoyed every last nibble of it – licked my plate, is that allowed? I found this wonderful recipe on TheFitnessista.com
My BreakFast Cookie Looked like this:
3/4 cup oats
1/8 cup Rice Milk (unsweetened)
1 tbsp Almond Butter
1 tsp Cinnamon
1 mashed Ninner
1/2 scoop Vanilla Chai Vega (my FAVE)
Mix and mash together and flatten out – put in the fridge over night and wake up to goodness! You can put tons on different fruits or toppings on this ”cookie” - go to thefitnessista. com for more ideas and details
Everyone is asking – Was The detox worth it? Heck yes it was! I lost a total of 7 lbs, 3 inches in my waist,2 from my hips and thighs! I was also able to shake that annoying cellulite from the thighs right off! Ahhhhh I heart my legs now
Today I am looking forward to baking up some pumpkin scones and I can’t wait to show you how they turn out! I am off to starbucks this morning with Ryan – I am so excited for our morning date!

He hates this costume and tries to rip the horns off his head any chance he can. I admire how some dog owners can actually walk down the streets with their pups costume still on! How do you do it???
Tonight will be a big feast at the ‘rents place! I am making vegan vindaloo and will post the recipe later! I am a crockpotting queen today – yikes!
