Top of the morning to you my Friends! 

How was your Humpday yesterday??  Mine was a very interesting day…..but a good day.  I got quite a bit accomplished on my “to do” list getting things ready for the Festivities Saturday so I am starting to feel a little calmer.  Are you like me and create list upon list of what needs to be done before you host an event?  I think I write the same list 5 or 6 times and stress out about it every time I write my silly list!  Ahhhh the joys of being “me” ;)

I  concocted again today for my afternoon snack, I was running a bit behind yesterday morning and I needed an afternoon snack so I threw together some Black Kale, a Tomato, some sea salt, a dash of Mrs. Dash and a squeeze of lemon!  This was a mighty tasty little snack I took with me!

I just read on a post done by Liz Stein that you should be eating a dark leafy green with almost every meal.  We all know my love obsession with Kale and I have these luscious greens in my morning smoothie and usually with dinner and now sometimes in my snacks!  So eat your Greens people – your body and skin will thank you.

I have received a few emails regarding what I eat on a daily basis.  So here it is folks -

My daily eats:

Wake up – 500ml of water with either fresh squeezed lemon or daily detox drops (I normally drink 2.5 L at least of water a day!)

BreakfastGreen Smoothie

Snack – 1 cup Nutmilk or water with a scoop of Vega Meal Replacement

Lunch- Salad – Mixed Greens, Carrots, Celery, Sprouts, 1/2 an avovado, and hemp seeds - with fresh lemon juice

Snacks (throughout the afternoon) - Carrot Sticks, Celery with Almond Butter, and usually a baked good or homemade granola bar ;)

Dinner – The weekly list:

Quinoa with Veg
Vegan Taco Salad
Mung Beans and Veggies
Salads with Hemp Seeds
Vegan Pasta

The list goes on ;)

I will not lie – I usually have another treat, (2 or 3 more) here after dinner……

Dinner was wonderfully made for me when I arrived home last night and we dined on Mung Beans and Veg.  Ryan sure knows a way to a girls heart ;)

After dinner I worked out Back and Bicep P90X style!  I have noticed such a difference in my body since regulating my “organic” potato or taco chip intake…I know they said there was healthy ingredients in them, but bottom line they were making my bottom bigger!  I have not had any since going on the detox on October 1st and I tell you the body really loves it when  you say no to chips (every once in a while is ok ;)   But I ate them often – even if it was only a handful here and there!  My weekend “snack” with movies now are Mary’s Crackers, Carrots and my baked treats!  YUMMMM

Nutritious and delicious

Hello Everyone, I hope you are all having a great Monday!  Mine has been going excellently and I am excited to now be relaxing at home.

This weekend was super hectic for us from Friday night all the way until now! Friday night Ryan and I did set up our tree and lights outside (which look beautiful by the way Ry ;) and Saturday was non stop “go” from 9 am all the way up until midnight! We had meetings on Saturday, errands, and then the Britton Family Tree Trimming at my Parents house :) Last night Ryan and I went to the Canucks game and that was tons of fun! We knew a few people in the box and laughed, cheered and had a blast!  The kitchen in the box is like a condo kitchen – stocked with bevy’s ;)

You all saw the pics from the Britton family tree trimming already, but you have not seen the pics of our place decorated so here they are!

I would like to take a moment to thank Martha Stewart for pre lit trees as this year my tree was up in record time! I don’t know about you, but placing the lights on the tree is the worst part……so go buy a pre-lit tree, all of you! Martha makes some great ones ;)

I am sure you all know these reindeer wired animal things that came out a few years ago? Well Hudson seemed to have found it in a Christmas box and decided that this was his new friend….he totes this thing everywhere with him and even to bed! We came home the other day and all of the gifts are ripped off the reindeer’s back and he is left bare……

Because this weekend was so crazy I realized I needed some relaxing time for myself – find that baking is really relaxing to me and I get excited when I have thought of a new recipe in my pretty little head, so I am happy to present you with my Kitchen Cupboard cookies. These are a staple cookie in our home. Not only are they nutritious, they are also delicious!! I tripled the batch of these and hopefully they last longer than 2 days like they normally do…..

Kris’ Kitchen Cupboard Cookies

1 cup Oat Flour
2/3 cup Almond Flour
1/4 tsp Sea Salt
1/2 tsp Cinnamon
1/2 cup Raisins
1/8 cup Shredded Coconut
1 tsp Baking Powder
**You can add some chocolate chips to the dry ingredients if you would like – I usually place a few on top, so they aren’t so sweet.

1/3 cup Flax Meal
1/2 cup Agave Nectar
3 tbsp Almond Butter
1 1/2 tsp Vanilla
2 tbsp Extra Virgin Coconut Oil

Preheat oven to 350
Mix the dry ingredients together
Mix the Flax Meal, Agave, Almond Butter, Vanilla, and add the oil in.  If my coconut oil is more solid I will mix it in like that by hand.
Mix the wet with the dry – and roll into cookie balls.  Lay them on the baking sheet and press them down slightly with a fork – add chocolate chips if desired.
Bake for 13 minutes!  Enjoy!

WORKOUTS:

On Saturday I stepped out my workout routine and did the P90X Back and Biceps workout – I heart this workout so much, I don’t know why but I absolutely love working out with weights. Some people really love cardio, but I love weights and yoga (totally opposite, I know!) Workouts are never relaxing to me like I know they are for some people…I wish I could learn to get work, lists, posts, and all the other areas of my life swirling around to silence for about 1 hour when I work out.

Friday Night Mexican Dinner

Good Morning Everyone!

Saturday’s Rock!  I have a meeting to go to this morning and I am really excited about it because we are meeting at Starbucks!  And you all know I hold a very special spot in my heart for Starbucks and especially Christmas Starbucks!  I heart the red cups :)

Yesterday was such a great day and I had the most wonderful chat with my ma’ma……it made me realize a few things – are we all living our life to the fullest?  Do we love every single day we wake up?  If you could do anything with your life what would you do, career wise?  I admire everyone out there right now actually thinking about this and those who are truly living their dream life!  I am on my way and am loving the processes that goes along with it!

Last night was a very chillaxing evening – we made dinner, rented GI Joe (not my idea) and I baked some cookies (my idea).  I think we almost ate them all!?!  Hmmm good thing the workout routine starts on Monday!  Tony please whip me back into shape!

When Ryan and I first started dating we would every Friday night go to this little hole in the wall Mexican restaurant, it was delish, cheap and fun!  We have now been eating vegan, so we tend to stay home more for our meals and last night my Friday Night Mexican craving crept back in so I decided to concoct my own vegan taco salad ;)   It was pretty darn tasty!

Kris’ Mexican Taco Salad

“Meat”:

2 cup Mung Beans
4 cups water
2 vegan Bouillons
1/2 tsp sea salt
1 tsp (or more) Organic Mexican Seasoning or Chili Powder
You could also add garlic if you would like to the meat….I didn’t have any so I didn’t.

Rinse Mung Beans in strainer for a few minutes – Place mung beans, water and bouillon in pot, cover and bring to a boil.  Reduce heat and let simmer for 20 – 30 min.  Keep checking to make sure there is still water in the pot and the beans aren’t burning.   You might need to add water as the cooking goes along.  Once the beans are done cooking add all the spices and mix – I also added my spinach here when the beans were being seasoned.

2 ripe Avocados
1/2 Lemon
1 tsp Organic Ground Cumin
1/2 tsp Sea Salt
1/2 tsp Pepper
1 med diced Tomato (you can omit)
*Garlic if desired

Mix all the above ingredients and Mash Up!  YUM!

Make The Taco Salad! – I added chopped tomatoes, peppers and guac to make up the taco salad!

This is a super easy meal, full of protein and nutrients – Plus I have left overs for tonight! – Mmmmmmm You could always make some Fresh Salsa and add a spoonful of that on top!  Delish :)

After dins came the cookies!! I found this recipe from balanceisbeauty.ca – I read that Krissy made these yesterday and I knew I had all the ingredients so I whipped these bad girls up!

I did have to alter the recipe a tad and used Oat and Almond Flour instead of spelt, coconut oil instead of canola oil, and Agave instead of Maple Syrup……but they still turned out amazingly!  You can find the recipe here.

Almond flour is the best way for me to bake (almost everything) without using Wheat and I am so grateful that a friend of ours owns a bistro here in Vancouver and she can get me Organic Almonds at wholesale!  I whip all my baking up with these nuts….Hudson loves them so I always “drop” one or two on the floor for him……what can I say I am a sucker for brown eyes ;)
