Happy Friday!!!

How are you doing on this day before the weekend?

I appreciate all of your comments on my Ghetto Greens post yesterday!  I love hearing all your blender stories.  Too funny!

I am on a mission for a Vita and the beautiful Jessica from DairyFreeBetty.com recommended me to a good site that seems to have a good price for this Bentley of a Blender.  Thank you Jess!  If you are interested in the site she forwarded to me, just let me know.

Has anyone ever heard of The HealthMaster blender?  My nana watches The Shopping Channel and told me all about it.  I googled it and it seems very similar to the Vita, but a bit less speed.  It is however, less than half the price of the Bentley Blender (Vita).  Thoughts??

Ya, I am going to get all Twilight on you here for a second or two.

Who has read Breaking Dawn?  I feel I will need you to call me later and hold me.

I need to hear other people’s opinion on this book!  I am about half way into it and I am feeling my love for the whole Eddie and Bells relationship to  be LEAVING me!  I thought this day would never come.

Now that they are hitched and with a steel bun in the oven the mystery and the suspense on if he is going to kiss the girl is gone.  Sigh…..that is what I think I loved so much.

Did anyone else feel this way while reading Breaking Dawn?

I am no where near finished yet, so it could get better and get my love tank full again, right?  Please tell me “Yes”.

A quick update on my medi sesh’s.  They are going as smooth as smooth can me.  I do get a little freaked out when I can feel someone staring at me and I open my eyes to a long brown dog :|  He just stares!

I am able to get my thoughts to stop from swirling around, but this isn’t for long.  They will start popping back in again and this will probably happen for another week or so.

The key is to really focus on the in and out of your breath.  This will bring you into that calmness and let your mind relax.  Ahhhh so nice…..

Yesterday was an amazing appointment with the Life Coach and I left there feeling like a million smackers!  I have made huge leaps when it has come to my voice and knowing what I really want.  I have this beautiful new acceptance for myself and I love watching it grow.

Learning to step back and observe yourself if a strange, but super interesting thing!

Ok, so I think I made a new fave dressing!

I wasn’t really feeling the apple cider vinegar yesterday, so I decided to use fresh lemon juice instead for my salad dressing.

Yes, if you follow me on Twitter this is the salad dressing that Hudson seemed to love so much :|

Full Of Flavour Dressing:

1 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp cumin powder
sea salt and pepper to taste

Mix it all up in a bowl and drizzle it over your greens!  So simple and so freaking good!

Well it is cookie baking time, and time to get some work done.  I shall also clean…..party on and hopefully enjoy some S’bucks in there somewhere!

Feel better by chewing your food!

Howdy Everyone!

Happy Wednesday to you all!

I am sitting here in my living room sipping a cup of Teeccino and figured it was a great time to write my blog post.

On Monday night my mom and I went to a “back on track” seminar where the speakers went over how to regain your vision and bring back proper nutrition.  The reason this seminar was held is because everyone at this time in February have fallen off their New Years Resolutions band wagon.  Have you found yourself slipping back to your old “comfortable” ways?

Stats show that roughly 70 days after New Years people fall off these hopeful resolutions.  So this seminar was to bring us all back into our vision for this year.

I can not say I have fallen off of mine.  But this was a great refresher for me.

I learned a lot from the nutritionist who spoke and was able to ask her many questions which I absolutely love!  For some reason my eating and health consume me and I get in this trance when I am around people that believe the same things I do about food for the body.  It was fab!!

The largest tip / topic she discussed that really stuck with me was the importance of CHEWING your food until it is in a liquid state. I almost fell off my seat. I am the fastest eater you will ever meet. I am done when people are still on their appetizer!

“WOW” I said to myself as she was going over what happens to the body when you don’t chew your food properly and the symptoms you will see currently in your body that are linked to ill chewing.

How many times to chew each bite you ask?

30 – 50 times or enough to make sure it is in a liquid form.

To make a long story short, digestion starts in the mouth and not the stomach as most people believe.  When food enters your mouth, saliva forms ready to coat the food to be taken down to the stomach where the acid is waiting to break it down.  Our tummies don’t have teeth, so large pieces of food can’t be broken down.

What happens with the food is it will start to get trapped in your intestines along the walls causing toxins in the body and many physical issues.  Plus, if our bodies are meant to absorb the nutrients and then release the waste this can not happen properly if the food is too large and stuck.  No nutrients will be used and no eliminating will be done after every meal as it should ;)

Since Monday I have been chewing everything 50 times!  It is so hard to get used to as I am was such a fast eater!  Salads take me forever to finish.

Smoothies and soups are to be fully coated in saliva before being swallowed. I figured I had to throw that tid bit in as that was a question asked at the seminar and well I think we all drink a smoothie through the day here!

Properly chewing your food will increase your energy, relieve bloating and gas and make you feel a whole lot better!

I challenge you all to chew each bite of 1 meal a day properly.  I know every meal to start might be too much, but 1 is easy.  Your body will thank you :)

Like I said I am rocking this chewing with all my meals and notice a difference already……and a sore jaw….but that will pass :)

These golden gems just came out of the oven.  They are made without a store bought sweetener!!!  I will post the recipe tomorrow!

Comfy Comfort Food

 Happy Wednesday Everyone!

Last night I met up with my good friends Sandi and Melissa!  We haven’t seen each other in a “coons age” as my nana would say ;)   We have been friends since grade 9 and it is still so nice that we have the ability to connect like we do.  We will do it again soon ladies!!!

Today is November 11th and well, summer is officially over here in Vancity.  I am loving that other parts of the world are still experiencing the sun and heat!!  If that is you, please let me know if you have a spare room for me :|   For the rest of us in full fall we are curling up with our blankets and books in front of the fireplace for coziness and warmth!  This condo does not offer the same effect as we an electrical fireplace and that thing does not give off the heat that I need!!!  But I still enjoy the fall living room, do you know what I mean?  Once fall hits everything in your living room seems snugglier….

On these chilly days I prefer warm food to raw food even though I will still have my green smoothie in the morning and my salad for lunch, snacks and dinner are always cooked.  I crave carbs in crumby weather!!  I should be reaching for celery sticks or fennel, but instead I reach for cookies, sweet taters, and squash!  Still all good for me, but still I feel better when I eat more greens etc.

One of my fave comfort foods is oatmeal!  So every time I have a bowl of oats I will jazz it up in different ways.  I don’t eat these bad bowls for breakfast I normally eat them for a snack.  This bowl I had the other day was dressed with coconut, cinnamon, a little drizzle of agave and a spoon ;)   I heart oats and cinnamon together!!  I might have some right now :)

Today is Hudson’s birthday, my little poopy dog is 2 years old!  LOL, we are having the family over for some cookies and coffee and maybe a little Wii for the party!  We are crazy pooch owners, I know ;)   He is a part of our family!

Fall Sweet Potatoes

Happy Sunday Everyone!

I hope your weekend has been great and you have been enjoying every little moment of it! Yesterday I had such a great day – I had a meeting at Christmas Starbucks, then I went for lunch at this amazing vegetarian restaurant here in Vancity called The Naam (Justin Timberlake goes here!  I know….he is my celeb crush……but don’t tell anyone ;) then I went book shopping!  I picked up a great book by Debbie Ford whom I really love.  Have any of you read any of her books??

I know the American Thanksgiving is coming up soon and for all of my American friends I wanted to post the famous sweet potato recipe that Ryan has whipped up.  Ryan once (back in the day) was a chef at a very well known restaurant here in Vancouver – Joey Tomatoes Mediterranean Grill.  For my Vancouverites raise your hands for Joey’s ;)   Anyways these sweets pots are amazing and he just had them made for me one night last week when I got home from work.  They are the perfect sweetness and all around delish!

Ryan’s Fall Sweet Potato Recipe

3 medium Sweet Potatoes cut into cubes
6-7 dates
1-2 tsp Cinnamon (depending on how spicy you want it)

Boil the sweet potatoes with the skin on – When the sweet pots are done remove them and place them in a food processor.  Add the dates and the cinnamon and process.  They will become fluffy and light!

Friday Night Mexican Dinner

Good Morning Everyone!

Saturday’s Rock!  I have a meeting to go to this morning and I am really excited about it because we are meeting at Starbucks!  And you all know I hold a very special spot in my heart for Starbucks and especially Christmas Starbucks!  I heart the red cups :)

Yesterday was such a great day and I had the most wonderful chat with my ma’ma……it made me realize a few things – are we all living our life to the fullest?  Do we love every single day we wake up?  If you could do anything with your life what would you do, career wise?  I admire everyone out there right now actually thinking about this and those who are truly living their dream life!  I am on my way and am loving the processes that goes along with it!

Last night was a very chillaxing evening – we made dinner, rented GI Joe (not my idea) and I baked some cookies (my idea).  I think we almost ate them all!?!  Hmmm good thing the workout routine starts on Monday!  Tony please whip me back into shape!

When Ryan and I first started dating we would every Friday night go to this little hole in the wall Mexican restaurant, it was delish, cheap and fun!  We have now been eating vegan, so we tend to stay home more for our meals and last night my Friday Night Mexican craving crept back in so I decided to concoct my own vegan taco salad ;)   It was pretty darn tasty!

Kris’ Mexican Taco Salad

“Meat”:

2 cup Mung Beans
4 cups water
2 vegan Bouillons
1/2 tsp sea salt
1 tsp (or more) Organic Mexican Seasoning or Chili Powder
You could also add garlic if you would like to the meat….I didn’t have any so I didn’t.

Rinse Mung Beans in strainer for a few minutes – Place mung beans, water and bouillon in pot, cover and bring to a boil.  Reduce heat and let simmer for 20 – 30 min.  Keep checking to make sure there is still water in the pot and the beans aren’t burning.   You might need to add water as the cooking goes along.  Once the beans are done cooking add all the spices and mix – I also added my spinach here when the beans were being seasoned.

2 ripe Avocados
1/2 Lemon
1 tsp Organic Ground Cumin
1/2 tsp Sea Salt
1/2 tsp Pepper
1 med diced Tomato (you can omit)
*Garlic if desired

Mix all the above ingredients and Mash Up!  YUM!

Make The Taco Salad! – I added chopped tomatoes, peppers and guac to make up the taco salad!

This is a super easy meal, full of protein and nutrients – Plus I have left overs for tonight! – Mmmmmmm You could always make some Fresh Salsa and add a spoonful of that on top!  Delish :)

After dins came the cookies!! I found this recipe from balanceisbeauty.ca – I read that Krissy made these yesterday and I knew I had all the ingredients so I whipped these bad girls up!

I did have to alter the recipe a tad and used Oat and Almond Flour instead of spelt, coconut oil instead of canola oil, and Agave instead of Maple Syrup……but they still turned out amazingly!  You can find the recipe here.

Almond flour is the best way for me to bake (almost everything) without using Wheat and I am so grateful that a friend of ours owns a bistro here in Vancouver and she can get me Organic Almonds at wholesale!  I whip all my baking up with these nuts….Hudson loves them so I always “drop” one or two on the floor for him……what can I say I am a sucker for brown eyes ;)

Breakin’ Vegan Bread

Happy Monday All! 

Surprisingly I am not grumbling it is Monday and I actually feel really rested.  Must have been the time change - it rejuvenated me…..or the fact that my weakness took over and I had coffee all weekend :|   Only 1 a day though so it wasn’t too bad just enough to get me going.  This weekend flew right by I feel like and last night at 10 pm I sat down and was already ready to go to bed. 

I hope everyone enjoyed the Vegan Pumpkin Scone“monsters” that I posted the other day.  They were a huge hit in with the fam and the BF ;)   Halloween night was very low-key and we just had dinner with the family and handed out candy to the kiddies.  My sister Michelle and I did decide to go through the Halloween costume trunk my mom has and pulled out a couple 80’s outfits that Mom used to wear – Think green aerobics ”bathing suit” style, french cut spandex ;)  I also found this amazingly cute belt in the costume trunk!  So I took it and am rocking it – In PUBLIC! 

Tell me this 80’s belt isn’t cute?  It has a leather buckle and roap belt – super cute (I think at least)

I caved and purchased expensive tea.  Normally I stick to teas on sale or the good ol’ celestial seasonings tea, but I felt I needed to buy this one.   I am sipping on this Amazing Pumpkin Tea right now – can you tell I heart pumpkin spice a lot???  I am having a mighty fine tea party on my own right now ;)

After dins last night (nothing special so I wont waste precious post space with it) I made this yummy Almond Bread.  Gluten Free, Vegan, Low Carb, High Protein Bread Baby!  This bread tastes really extra yummy toasted with almond butter on it and maybe a smear of raspberry jam.   I modified and vegafied the simple bread found on ElanasPantry.com

Gluten Free, Vegan Bread:

2 1/2 cups Almond Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
1 tablespoon Agave
1 tsp Apple Cider Vinegar
3 “eggs” – Flax Eggs – 3 tablespoons Flax Meal, 9 tablespoons warm water
2 tablespoons EVOO (you might need more if the batter is pretty dry)

Preheat the oven to 350
Mix up the Flax Eggs in a bowl and set aside
Make your Almond Flour (or use pre-made Almond Flour)
Mix the dry ingredients together
Mix the Agave, EVOO, ACV and the Flax Egg into the Dry Mix. 
Mix by hand well – the dough is not to be runny.
Place the dough into a 6 x 3 loaf pan and bake for 20 -25 minutes. 

I hope you all enjoy this bread as much as I do!  Ryan and I ate fresh baked bread and Almond butter while watching the newest Ice Age movie.  Have you seen it?  I fell asleep…….

Pumpkin Vegan Scones

Happy November 1st All!

Did everyone have a wonderful Halloween?  I did!  Ryan and I went to Bucks (starbucks) and I had my very first coffee after my month away detoxing and it was soooo good.  But I realized I don’t need it all the time – I did feel jittery after drinking it.  Does anyone have proof that coffee is somewhat good for us?  I am looking for something to make me feel better because I do love the taste of it ;)

The Verdict – GOOD!  (see all of those boxes behind me?  Christmas is in those boxes!  Starbucks will be in the season on Nov 3!)

We were heading to my ‘Rents house for some Halloween Dins and handing out candy to all the little kiddies!!  I made nice Indian dish – NOT.  Oh my….I almost killed everyone with the spice level in this dish.  I didn’t not post pics or will post the recipe because I am ashamed……hehe.  Seriously organic dried chilies have some Kick that I don’t want to try for a long time now!

Moving on – I did make these fantastic scones last night for dessert!!  I used to make this batter for muffins and just tweaked it a bit and made scones out of it.  I noticed that Angela on OhSheGlows.com made her scones look like spooky faces and thought that was a great way to jazz up dessert for the festivities last night!  I don’t eat wheat, so my baking is normally done with almond flour.  It is so easy to use and makes every baked item sweet and delish!

Vegan Pumpkin Scones:

1 1/2 cups Oat Flour
1 cup Almond Flour
1/2 cup date paste (soak dates in warm water and blend in Food Processor)
1 flax egg (1 tbs flax seeds & 3 tbs warm water – I used some of the date soaking water for extra flavor)
1/2 cup coconut oil (melted)
1 – 2 tbs Agave Nectar (depending on sweetness level)
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp sea salt
1 cup Pumpkin (I used canned this time, But I used fresh in the  past)
2 – 3 tsp  Cinnamon (I used 3 because I love Cin!)
2 -3 tsp  Pumpkin Pie Spice
1 tsp vanilla

-Preheat oven to 350
-Place the dates in a bowl and add warm water - just enough cover them.  Let sit while preparing the other ingredients.
-Mix the flax seeds and warm water and set aside. (I used some of the warm date water to mix my flax egg to keep the flavor.  After the dates have soaked for a few min, take some of the water out with a spoon and mix the flax egg!)
-Mix all the dry ingredients together in a bowl.  I had to make my flours so I placed oats in the coffee grinder and made them into a fine flour (Super easy!) I also did this with the almonds ;)
-Melt the coconut oil for a few seconds in the microwave.
-Place the soaked dates with some of the dated soaking water into the Food Processor and blend until smooth.
-Mix the date “paste” with the melted coconut oil, add the agave nectar, and vanilla
-Then mix in the flax egg to the wet mixture.
-Add the dry and wet together and mix well, but do not over mix.  My batter always turns out fluffy, so it is not hard to mix up!
-Use a spoon to drop the batter onto baking sheets.  I make usually 6 scones with this batter and 8 muffins with this recipe.
-Decorate the scones up if you would like!
-Bake for 20 min

Voila!  Vegan Pumpkin Scones!!!  I doubled the above recipe to make 13 scones for the fam :)   When I make muffins out of this batter I have glazed them with a agave and coconut oil “wash” and that tasted amazing too!

Good Detox Diet Eats!

Hello Everyone!

I hope you are all having a wonderful Humpday!  Mine is going very well.  So far I am pretty busy and it is just going to get busier today!  Last night was the first night in a long time I was able to relax at home.  I finished watching the newest episode of Gossip Girl…..yes I watch that show and I love the muthachucker!  So bad yet so good.  This show, I tell ya, I am in love with their homes, thier  fashion, and their lifestyle!  I mean please ordering martini’s at the age of 17 at an upscale lounge would have been nice! 

Before I snuggled  up for my belated episode last night I had the best detox dinner yet!  This was inspired by this recipe I drooled over on thefitnessista.com earlier today.  Thank you Gina

Since I am unable to used canned anything on this detox everything in my dins was fresh and organic!

Kris’ Tomato Mung Bean Sauce with Baked Sweet Potato

2 cups Mung Beans
2 cups water
2 vegan bouillons
1 tsp fresh grated ginger
1-2 tbsp organic cumin seeds
2 tbsp EVOO
1/2 med red onion
3 large tomatoes (I used beef steak tomatoes)
1 large yellow pepper
4 cups chopped Kale
2 heads of Broccoli
3 med Sweet Potatoes

Rinse the mung beansand then place them into the pot with roughly 2 cups of water and 1 bouillon.  Bring to a boil and let simmer until done – 20 minutes (ish).

Preheat your oven to 400 and place cut (long ways) sweet potatoes on a baking tray, drizzle with olive oil.  Bake the sweet potatoes for 20 min (check them you might need to bake a bit longer)

While these gems are baking up – start your veg!  I use a large frying pan to make my veggies.  Heat the EVOO over medium heat and add the cumin seeds and allow to cook for 1-2 minutes.  Add the onion and fresh ginger.  Add the cut up veg and 1 cup of bouillon (I always add my kale in last as I don’t like it too limp) - Let simmer for a few minutes until the rest of the meal is done!

Simple Indian Inspired Dinner & Ninner “Ice Cream”

Hola!

Well Monday is almost over and it was a pretty good day!  I am on my last week of my detox and I am really looking forward to treating myself to a cup of starbucks when I am done!  Slap me on the hand if you want……but I can treat myself ;)

After work today I rushed to the detox appointment then raced home to have some dinner to head out again to take my new winter coat back L  I love this coat and for some reason I can only find it in a Medium everywhere and I need a small dang it……I am tall so my arms are long and they fit the medium coat fine, but the body is a bit big….sniff….sniff……I loved this coat so much I even called my Nana from the store to see if she could possibly take it in and make the body fit better.  She declined on trying that project ;)   I did end up getting another coat, but it is not the same….I will rock it anyways with love!

 

I was able to whip up this delish little number last night for dinner so I was blessed with leftovers tonight.

My inspiration came from this little Indian restaurantwe walk by in West Vancouver when we stop at starbucks for tea before taking the d.o.g for a romp around the beach.  It ALWAYS smells so delightful and I have felt so deprived of spices and food for the last 3 weeks I tried to replicate a dal dish and Indian “rice” as best as I could.  I did not use rice as I was looking for a little more protein so I used Quinoa instead.  I also made some stewed lentils with spices and fresh tomato’s and some Indian veg!  It was pretty darn good if you ask me J

This recipe made enough for Ryan and me to eat 2 dinners and 1 large lunch for him.

Kris’ Simple Indian Dish - Broken Down:

The spices in each item are the same but the flavors of the veg and grains make them taste so different!  I started the lentils and Quinoa at the same time and the veggies didn’t take as long.

Indian Rice/ Quinoa

2 cups quinoa
4 cups water
2 cups frozen peas
1-2 tbsp organic cumin seeds
1-2 tbsp organic curry powder
½ med red onion
1 tsp EVOO

Heat the EVOO over medium heat.  Add the cumin seeds and cook for about 2-3 minutes.  Then add the onions and curry and toss for another couple minutes.  Then add the quinoa, water and peas.  Cover and cook for about 20 minutes.  You might need to add more water as you go along.

Indian Lentils:

1 cup dry lentils (I used brown lentils)
1 tomato diced
1 tbsp olive oil
1-2 tbsp organic cumin seeds
1 tbsp organic curry powder
¼ red onion
1 tsp fresh ginger

Heat the pot over medium and warm the EVOO.  Add the cumin seeds and let cook for about 3 min, then add the onions and ginger and cook until the onions are soft.  Then add the curry powder and the lentils with water.  Boil for about 15 min and then added the diced tomato, cover and cook for another 10 minutes.  Stir occasionally. 

Indian Veggies:

2 small cauliflowers
4 large carrots
1 orange pepper
1 green pepper
¼ red onion
2 tsp fresh ginger
1-2 tsp organic cumin seeds
1 cup vegan bouillon
4 large black kale leaves chopped (I used a bit more)
1 tsp EVOO

Again heat the EVOO with the cumin seeds over medium.  Add the red onion and fresh ginger in and let turn soft.  Then add all the veggies in except the kale and pour the bouillon over the veggies.  Let cook for about 5 minutes then add the kale in and let cook until your desired tenderness.  I like my veggies on the harder side so I didn’t cook mine for too long.  Maybe 10 – 12 minutes in total.

Then assemble your dins!  One layer at a time :) it was not a true Indian meal……but it will do for now.  After dinner was our treat as we watched the movie “the women” which I did not find as good at I was hoping it to be.  For our movie snack I whipped up some ninner cream!  On deadly detox I am not allowed to eat bottled vanilla…..so I used some vanilla chai flavored Vega and it turned out great….and green :|  

Ninner “Cream”

2 large frozen bananas
½ scoop of vanilla chai vega
3 tbsp shredded unsweetened coconut

Place all in a blender and blend it!  You might need to freeze if for a few minutes after :)   The picture does not look like it tastes good….but it really does, I promise!
