Pizza Pie!

Howdy Lovelies!
Happy Sunday!! I can’t believe how fast this little weekend of ours flew by! Did you all have a nice one?
I shall fill you in on our weekend recap
Friday night was a meeting at Ryan’s sister and brother in law’s place and that was great! Saturday I spend the day with my beautiful mom and sister. We hit the mall and I finally purchased a new straightening iron. Mine was biting the bun for sometime and I was waiting to buy one until I read some good reviews. I ended up going with the Remington which got fab reviews and it heats up to 430! My hair will hate me, but look ever so sleek and smooth

After shopping we had a dinner to attend too and unfortunately there wasn’t too much for vegan’s to choose from so we “feasted” on green tea! Haha! On our way home we picked up a movie – “New York, I love you” (NOT GOOD which was surprising with the HUGE cast of good actors in it) and ate a ton of snacks to fill us up!
Ahhh this morning was beautiful and relaxing as we hit up the S’bucks, headed to the book store and to Whole Foods for some shopping and a nice lunch.
My life coach recommended I read Eat, Pray, Love so I purchased that today at Indigo. Has anyone read it yet?
I can’t wait to dive into this book as I have heard a ton of great reviews! This is what I will do before the hockey game starts tonight! I heart my canucks ;)
Dinner tonight was a wonderful pizza pie! I picked up this wheat free, vegan crust from Whole Foods and we added our own toppings. Pizza sans cheese is a little different, but still good
I was considering purchasing some rice cheese, but I didn’t want to get it to find out it was nasty. Who has had rice cheese? Is it good???
Toppings for this delish pizza was – Basil, Mushrooms, Green Pepper and Organic Tomato & Basil sauce! YUMMMMMM






I also had a simple bowl of greens with my pizza and mixed a new dressing together!



Simple Salad Dressing:
1/2 tsp dijon mustard
1 tbsp evoo
1 tbsp apple cider vinegar
dash of sea salt
Mix and drizzle!
I LOVE dijon mustard! I really wish I still ate fluffy bread sometimes full of mustard and veggies and olives…..ahhh so tasty!
Off to read my book! Who has read it? Rice cheese – is it good??

Day 2 and Extra Healthy Cookies

Howdy Everyone!
It is Wednesday night and I am finally sitting after a very busy! My feet are up, my tea is on my table and I am enjoying some quiet music
Day 2 of my Vega 7 day challenge was a success! I didn’t snack in between my plan and I felt wonderful!
My day looked like this:
Breakfast – 1/2 serving of vanilla chia vega powder, with 1/2 apple. 1/2 banana and a tad of almond milk and filtered water.
Lunch – Mondo Salad with 1/2 an avocado, some sprouts, broccoli and my minimal dressing (1/2 tbsp evoo and 1 tbsp apple cider vinegar)
Snack - 1 apple
Dinner - I did not follow my dinner meal plan as we went out for dinner for my sis birthday. I had a rice and beans dish
YUM! Happy Vegan eats out.
Snack – 1/2 serving vega in water
I felt steady and fuelled again all day
Dinner out was so nice and a great relaxation time for me. I had a glass of red wine and chilled….
Today on the other hand has been quite busy. I baked some Extra healthy cookies for Ryan and he loved them!
Kris’ Extra Healthy Cookies:

2 cups oats
1 mashed banana
1/2 cup almond butter
2 tbsp coconut oil
1/2 cup shredded coconut
1 1/2 tsp vanilla
1 tsp cinnamon
1/2 cup raisins
a few vegan chocolate chips
Mix the oats, coconut, cinnamon, raisins and chocolate chips together
In a separate bowl mash the banana and add the nut butter, vanilla and coconut oil
Add the wet bowl to the dry – Mix and place spoonfuls of batter on a parchment lined cookie sheet.
Bake at 350 for 13 minutes
No added sugar and extra healthy = Perfect morning, afternoon or evening snack!
I am just looking at my arms and realizing I am super pasty so I am off to go self tan. I am looking for a good, natural self tanner. Do you know of a good one? Have you ever got spray tanned?
I think my sister and I will go hop in the mystic tan booth one of these days
