Banana Bread Pudding {A Simple, Vegan, Nutritious Breakfast}

How has your weekend been treating you?

So far I can actually say that mine has been pretty relaxing.  Hudson seems to be feeling a bit better, but we still think he has some foreign object stuck in his tummy.  The great news is, he is finally eating food and begging for food again 😉  A whole week without Hudson begging was strange.

Sundays are the mornings I am sure we all lounge around in bed for a little longer.  We lay with our eyes closed not thinking about a thing.  I don’t even care to jump up to open my blinds to see what the weather is doing out there {Nothing great today, just yucky rain}, it is my morning to breathe, chill and take my time.

Sunday’s are usually full of tradition and families will enjoy pancakes together, or loved ones sit and sip 2 cups of coffee instead of one.  We don’t really have any “Sunday Rituals” together in our home, but I personally take this day to be a bit more decadent with my breakfast choices and whip up a loaf or fresh muffins for the morning eats.

This morning I wanted something simple, yet satisfying.  Something that would give me the sweetness without using a sugar.

Ripe bananas were sitting in my basket and instead of forgetting about them for another few days, I took one and cracked it open.  I find the best recipes start with one item in your hand and I get in this daze where I blank out and just start throwing things together…..

This morning’s breakfast turned out amazing and I think I will be using the second ripe banana to make this Banana Bread Pudding for dessert!

Banana Bread Breakfast Pudding:

1/2 ripe banana {mashed}

3 tbsp chia seeds

1/2 tsp vanilla extract

1 tbsp cocoa powder

1 tsp coconut oil {melted}

1/4 cup vanilla rice milk

To Make Banana Bread Pudding:  Mash the banana in a bowl.

Add in Chia Seeds

Drop in Vanilla and Cocoa

And stir together with Coconut oil and Vanilla Rice Milk

And Enjoy!

For this recipe I used the AMAZING Coconut oil by Kelapo.  This is the best coconut to add creamy flavour and texture to your baking or “un-baking” such as this recipe.  I have been working with this coconut oil after the lovely Erin {find her on Facebook and Twitter!} sent us a jar to try.  This oil has been added in our frosting for the bakery and it is adding some out of this world flavour and texture!

Before I go for the day, I wanted to let you know I tried the latest recipe from Angela at last night!  We made the Protein Powder Goddess Bowl for dinner and absolutely loved every bite!

Find the original recipe here.  I did tweak my dressing a bit by replacing the Tahini with sunflower seeds milled up into a paste.  Dang allergies to sesame seeds.


Today I am off to the one of a kind show to get some ideas for the business and some Christmas shopping done.

    I do love Sunday mornings! Especially, when they are in the Christmas Season! During this time I always play some Christmas tunes while we sit lingering on a couple of cups of coffee. Although, this comfy Sunday morning we didn’t have pancakes…we are saving ourselves for the festive Christmas Morning and Christmas eats and treats!! So, this morning we had our morning quinoa, blueberries, cinnamon with some vanilla rice milk! I do love my blueberries!! See you soon as we enjoy the One of a Kind Show! Love Mom

    I have to thank you because I am now sitting here, baby is down, enjoying a big goddess bowl & watching Divine Secrets of the Yaya Sisterhood on TV. I wasn’t sure what I was going to make for dinner tonight since my hubs is working and these nights tend be soup nights….you totally inspired!

    My weekends have been a little off lately as the Hubby has been working most Saturdays. Which means that Sunday is usually a mad dash to get some last minute things done before Monday rolls around again:( Yet, yesterday we did end up going out for breakie which was a nice change:) As Christmas is approaching FAST..we also finally started shopping..and even got most of it done!!
    Have you been to the new Morgan Crossing shopping area in White Rock? It’s pretty neat and has everything and anything you need.
    As I have a texture thing with any kind of rice/chia pudding…I think I would blend up the chia seeds first! Thanks for the pudding idea!! Especially the no sugar part:)
    Hope Hudson gets better!
