Candy Cane Lane Almonds

I have an addiction. It’s to everything that reminds me of my childhood Christmas.

I think I knew this existed within me, but I really saw the beast come out when I hit the roof that Ryan didn’t have the tree on when I got home one day. “who does that?!” I questioned.

The next morning my hunky man said in an unsure voice “uhhhh how about I plug your tree in for you?”. Very well, carry on. I sipped my coffee as my living room glimmered.

Mom if you’re reading, I get this from you. Thank you, I love the magic of Christmas! I feel I only have a limited time to fit in everything! Does anyone else feel this?? Watch all my christmas movies, burn all my candles, absorb Starbucks as much as I can, see lights, eat, bake, eat and bake! Oh shoot….I haven’t even shopped yet :/

Today I bring you something that has brought the holiday magic in even more…

Candy Cane Lane Almonds:

2 tbsp crushed candy cane

1/3 cup melted dark chocolate (I used Endangered Species 88% Dark)

1 tsp coconut oil

1/2 cup unsalted dry toasted almonds

To Make Candy Cane Lane Almonds:  Melt chocolate and coconut oil together in a small sauce pan, on very low heat.

Break up the candy can by placing it into a baggie and use a rolling pin to gently break it into small little shavings.

When the chocolate has melted, add in the almonds and coat well.  Place the chocolate almonds on a parchment lined sheet and sprinkle with candy cane pieces.

Place in the freezer for 20 minutes before eating

Now, I need to master a good gingerbread and I’ll be a happy person.

    Ha ha. I SO relate to this. I am such a child when it comes to Christmas, I spend so much time rejoicing in the holiday movies and music and then I realize I only have 1 week left to shop. Oops?

    I made the gingerbread cookies recipe by thespunkycoconut. It turned out awesome by subbing molassese for the sugar and adding more spice. It is definately worth a try and easy to make. I havent even started my christmas stuff and I feel really behind this year. Oh well just need to slow down and enjoy family and friends.
