Cauliflower Rice is a super healthy, great for grain free eaters and everyone is talking about it!
Can you believe that up until 3 days ago, I have never tried cauliflower rice?! Why did I wait so long!!
It’s amazing and totally serves my rice cravings while I’m rocking the grain free life.

Here’s that I do…
I have blocks set in my schedule to get mindlessly caught up on social media. I can get taken away into the lives of other through snapchat (username: krisbritton), it’s so entertaining for me! I follow one of my friends, Lori Harder who always seems to have the best, simple, and tasty recipes she will share in the short snappy clips! Thankfully I can see something once and it’s embedded in my brain, so I could remember what she did to make Faux Fried Rice as she called it.
I loosely followed a recipe from Lori (loriharder.com) and did my own Kris Tweaks – it’s my habit to “Kris Style” everything, as my mom calls it.
Before you think my bowl of Cauliflower Rice looks gross, which it kinda does, trust that this bowl of healthy goodness actually tastes GREAT, I just didn’t get the cauliflower as “fine” or rice like as I would have wanted….but that’s what happens when you don’t use technology now a days and you do everything on your own ; ) I hand chopped my bloody cauliflower and enjoyed every second of it!
For some reason, I love cutting veggies on a cutting board.
I feel so top chef and I get into a rhythm where I find it quite healing!
Am I the only lunatic here that loves to chop?!
Cauliflower Fried Rice – Simple + Healthy:
1 head of cauliflower – chopped fine (or use a food processor – best idea)
3 carrots – chopped
4 green onions – chopped
1 tbsp coconut oil
2 tbsp low sodium gluten free soy sauce
* optional – 2 eggs (I am trying to stay away from eggs due to my food allergies, but they are GREAT on here!)
To Make Cauliflower Fried Rice:
Heat your frying pan on medium heat. Add the coconut oil until melted and the pan is hot.
Add the cauliflower rice to the pan and sauté for a minute. Add the carrots and green onions and the 2 tbsp of soy sauce!
Once the veggies are almost done cooking, add your 2 eggs if you choose and cook until the eggs are fully cooked.
Or if you’re not cooking with eggs, like I have been doing, cook until the veggies are done and serve with your protein option! I’ve had it with both chicken or asian beef and it’s so delicious and gorgeously grain free!
This dish has been a staple in my healthy meal planning because it’s so simple, tastes great (even cold!) and I can make a large batch of it and keep it in the fridge for a snack!

Obviously the Cauliflower Fried Rice will be made OFTEN this coming week because I keep strong on things I love for a very long time….
But I am also a creature of habit and could eat the same dang thing every single day…which I do if I don’t consciously break my habits. Learning. ; )
