I hope your weekend has been great and you have been enjoying every little moment of it! Yesterday I had such a great day – I had a meeting at Christmas Starbucks, then I went for lunch at this amazing vegetarian restaurant here in Vancity called The Naam (Justin Timberlake goes here! I know….he is my celeb crush……but don’t tell anyone 😉 then I went book shopping! I picked up a great book by Debbie Ford whom I really love. Have any of you read any of her books??
I know the American Thanksgiving is coming up soon and for all of my American friends I wanted to post the famous sweet potato recipe that Ryan has whipped up. Ryan once (back in the day) was a chef at a very well known restaurant here in Vancouver – Joey Tomatoes Mediterranean Grill. For my Vancouverites raise your hands for Joey’s 😉 Anyways these sweets pots are amazing and he just had them made for me one night last week when I got home from work. They are the perfect sweetness and all around delish!
Ryan’s Fall Sweet Potato Recipe
3 medium Sweet Potatoes cut into cubes
1-2 tsp Cinnamon (depending on how spicy you want it)
Boil the sweet potatoes with the skin on – When the sweet pots are done remove them and place them in a food processor. Add the dates and the cinnamon and process. They will become fluffy and light!
Look at this – I could lick the screen!
