Healthy Fries Dippin’ With Honey Mustard

I rocked the gym out late yesterday afternoon and while on the dreadmill I was dreaming of something salty and crunchy…..

A salad with carrots and avocados, as I already had planned for dinner wasn’t going to cut it.  I needed that carby crunch and I needed it asap.  I hopped off the treadmill, did a few mountain climbers and listened to tummy making fierce noises like the gift wrapped cat from National Lampoons Christmas Vacation.  Eeeeekkk.

Instead of taking time to stretch it out, and leisurely walk back up to the condo, I ran because I had fries running laps in my head!  I was being lead by an imaginary fry dangled in front of my face.

As a good gal on her 21 Day Cleanse, I chopped up sweet potatoes and delicata squash as the “fry” base and tossed these strips in coconut oil and sea salt.  HEAVEN and Cleanse friendly 😉

Let me ask you an Important Question….

Do you ever get possessed in the kitchen??  Like, taken over by a serious force you have no idea where it is coming from?

Sometimes this happens to me.  Let me explain.  I will be in the kitchen following a recipe and next thing you know I am making a dip.  I throw things into the blender without me even knowing what I am adding or what I am making, but subconsciously I am making a masterpiece.  Maybe, just maybe, I have made these random “unknown” things in a past life and my “old mental recipe box” is just being opened up.  You think?!

My kitchen “blindness” led me to a FAB dip for my gloriously healthy and tasty fries.

Let me share, Dolls.  You will be impressed.

Sweet Potato & Squash Fries with Honey Mustard Dip:

Fries:

2 sweet potatoes

1 delicata squash

1 tsp coconut oil

1/2 tsp sea salt

To Make Fries: Preheat oven to 385.

Cut sweet potatoes and squash into thin “fry-like” strips and place in a big mixing bowl.

Add the coconut oil and sea salt and toss together with your hands, evenly coating each fry.

Lay on parchment lined cookie sheets and bake for 20 minutes, rotating after 10 minutes.

Honey Mustard Dippin’ Sauce:

1/2 tsp yellow dry mustard

2 tbsp nutritional yeast

1 tsp olive oil

1 tsp apple cider vinegar

1/8 tsp sea salt

2 tbsp water

1 medjool date

To Make Honey Mustard Dippin’ Sauce: Place all ingredients in a blender and buzz it up!

Serve with warm crispy fries for best results :)

This whole set up made me a very happy girl at my dinner table last night.

Ryan always sits down with a look of curiosity on his face…..and asks “what do we have here?”.  He never cringes, judges or puts down my kitchen monster creations.  Well, please, because most of them rock my pants off!

I am dealing with Bakery stuff today!!  I am so happy that we have been getting some outstanding feedback from our blood, sweat and tears.  Don’t worry none of the above are actually in the cookies 😉
