Did you have a glorious weekend??

My weekend was not relaxing.  But I LOVED it!!  If you read the Saturday Post, you know that month end really takes a bang in my life.  The great news is at the final hour of the 31st, Ryan’s sister, my gorgeous friend, Krista hit her new rank in the business and is on top of the world! It feels amazing working together with people you love and supplying them with the support and and system to get some extra health and finances into their lives.  So Freaking AWESOME!

After the craziness of the end of month rush, I worked and watched Tangled yesterday then we hung out at Whole Foods for some dinner  and rung in April with some Healthy Style.

Today I have my Friend and Trainer, Michelle coming over to whip me into shape on Day 4 of my 90 Day Bikini Body Challenge!!  We’ll be masterminding for a some fabulousness to be providing for you on the blog, how fun, right??

Ya’ll know I’m 100% dedicated to my 90 Day Challenge and have been whisking up some delicious, slimming, sugar free treats for us all to enjoy so we can still have our sweets, but don’t have to sweat over them.  Don’t get me wrong, we’re still sweating!!!  Just not with “worry” over the treats we are reaching for.  Gawd, I love chocolate, sweets and goodies!

Peanut Butter Pretzel Monkey Cups!!  These tasty vegan goodies are BOMB!

Peanut Butter Pretzel Monkey Cups:

{makes 2 treats}


1/2 cup Gluten Free Pretzels

1 tbsp Coconut Oil {melted}

1 tbsp Cocoa Powder

5 drops Liquid Stevia


1 ripe Banana

1 tbsp Peanut Butter

1 tsp Coconut Oil

4 drops Stevia

To Make Peanut Butter Pretzel Monkey Cups: In a food processor place the pretzels and cocoa powder.  Pulse until combined and the pretzels are broken up.

Drizzle in the coconut oil and stevia and pulse until combined.

Dive mixture into half and place into a muffin liner.  Flatten into a crust.

Place in the freezer until the filling is ready.

In the food processor or magic bullet place all the filling ingredients and pulse until smooth.

Fill each muffin liner and crust with the filling and top with Chocolate Shavings {optional}

Place in the freezer for at least 45 minutes before serving.

I ate my 1 last night and I shared the other with Ryan.  It was hard to do, but I did it.

I’ve been keeping away from Banana’s on a daily, but for a special once a week treat….or maybe twice, I’m ok with it 😉

Now….I must get to my coffee, my shake, strap on my spandex and get my sweat on!!!  WOO HOO!!! It’s time to Rock and Roll these abs into their ultimate potential!

What’s new with y’all today??

I am still fighting this throat irritant and it is beginning to cramp my style.  It is just hovering at the same soreness for days now.  Normally you get a sore throat, it goes away in 2 days and you are stuck with a bit of sniffles, not yet!  I am actually getting sick of my throat lozenges.

I had such a wonderful day today – My lovely nana took my sister and I out for coffee (not too sick for coffee dates :) ) It was so nice to see them both and we had a very relax, good time.  Nana’s rock, don’t they?

My body seems to be craving sweets like nobodies business….It can’t be candida because I am taking my daily detox drops so it is my sore throat that keeps asking for the treats.  I caved and made these:

Raw Vanilla Nut Butter Cups

* Makes 3 large cups

Vanilla Nut Butter Filling:

3 tbsp raw almond butter
1/2 tsp agave nectar
1/4 tsp vanilla
dash of sea salt


5 tbsp raw cocoa powder
3 tbsp coconut oil
2 tbsp agave nectar

Mix the chocolate ingredients together.

Add a thin layer of chocolate to 3 medium – large paper muffin liners

Place in the freezer for 10 minutes

Mix up the vanilla almond butter filling

Remove the chocolate out of the freezer and add a ball of nut butter to each chocolate bottom

Cover the cups with chocolate and place back in the freezer for at least 30 min

Ok, so these are as good as the picture looks! Just the right sweetness :)

On another note, I had another Life Coach appointment today which was fabulous!  Her and I discussed my upcoming women’s groups I will be attending.  I am excited to get out and meet some new people with the same interests in my neighborhood :)  Networking / Connecting is something I am good at, I love interacting with people and sharing different tips, ideas and all that fun stuff.

We also worked a bit more on “romancing” myself.  Sounds funny, but makes sense. I should absolutely be taking the time to take myself out on a date and connect with myself again.  It has been hard lately as I have been so busy, so I think I have a date with ME on Thursday night.  Now, what should I do?!

I hope your day is going well?  I have had a very well day so far 😉

I am now working at home so I am able to get up and go to the gym, have a relaxing breakfast before I get into the craziness of the day which today consisted of a lot of emailing, facebooking, calls, twitters, etc…..  After my lunch today I was able to take Hudson for a quick walk to a local park and enjoy the dusting of snow we got yesterday for everyone here in Vancouver wishing we got more yesterday, not to worry – more is coming tonight!

These Peanut Butter Cups were so freaking good the panel of judges (the fam) actually thought I bought the Reece’s cups from the store.  There is a bit of a funny story that goes along with the PB Cups – Last week I was lucky enough to have WON Jessica’s Giveaway and was sent a box of these homemade goodies…….aren’t they beautiful?!


Well she had also submitted the same recipe for my contest and as soon as I had these out for our Saturday night gathering and we all had one, we knew right away that these were the winning dessert for the i heart wellness Contest.  They were decorated so beautifully and the taste was to die for, melt in your mouth, peanut butter goodness!

Jessica’s Peanut Butter Cups:

Peanut Butter Cups

* 1-12 ounce bag chocolate chips
* 2-tbsp coconut oil


* 1 cup peanut butter
* 1 cup icing sugar

Melt chocolate chips and coconut oil in double boiler. Fill paper muffin cups ¼ full and spread chocolate around the sides. Place in freezer to harden.

Filling: Mix 2 ingredients and chill. Roll in balls and place in cups. Pour melted chocolate over top. Chill until set.


Since writing this post, the snow has started so I am off to take the pooch for a frolic and enjoy the holiday inspired evening!
