The Merry Christmas Recap!

We had such a wonderful Christmas Eve and Christmas Day, I thought I would give a little recap from beginning to end 😉


Christmas Eve afternoon I had to prepare the feast for Ryan and I for the 2 big dinner gatherings a head.

I made the wonderful Sweet Potato Casserole found on the OhSheGlowssite, however I modified it “Kris” style.  I switched the margarine for grapeseed oil, the spelt flour for oat flour and I didn’t add any sugar in I just stuck with the maple syrup.  OH MY…..these were such a hit around the table!

Sweet Potatoe Casserole:

4 large sweet potatoes, peeled and cooked
2 tablespoons grapeseed oil
1/8 cup almond milk (or soy, hemp, etc)
1 teaspoon vanilla extract
1/4 cup pure maple syrup
1/2 teaspoon fine grain salt
* 3/4 teaspoon freshly grated nutmeg
3/4 teaspoon cinnamon


1/4 cup grapeseed oil
1/2 cup maple syrup
1/3 cup spelt flour
3/4 cups chopped pecans

 Preheat the oven to 350 F

Peel and then boil sweet potatoes until tender.
Whip (I used my hand blender) the sweet potatoes with the oil until smooth.
Add the milk, vanilla, maple syrup, sea salt, nutmeg and cinnamon.
Pour into casserole dish.
Next, mix the topping ingredients together until well-combined. Sprinkle topping mixture over the casserole and bake for approx. 50 minutes.

I also needed to become creative with the Protein part of our dinner, so I decided to make Mung Bean Stuffin’.

I used the same spices as you would in stuffing so it had a real Christmas flavour to it!

Mung Bean Stuffin’



1 onion
3 celery stalks
2 cups mung beans
4 cups water
1 tbsp EVOO
2-3 tsp poultry seasoning
sea salt and pepper to taste

Heat a pot over medium heat and warm the EVOO, add the onions and celery and cook for about 5 min.
Add the mung beans, water and poultry seasoning to the onions and celery once they are soft.
Sprinkle some sea salt and pepper.
Cook for about 30 – 40 minutes, stirring occasionally.

Ryan’s favorite thing at Christmas is Cranberry Sauce, this guy can eat a whole can of cranberry sauce to himself, but since changing his diet, he will not eat the regular canned sauce, as it is whacked full of sugar!  So I martha’d it in the kitchen and whipped him up some all natural cranberry sauce.

Agave Sweetened Cranberries:


cranberry sauce

1/3 cup agave nectar
1/3 cup water
1 bag of fresh cranberries
dash of cinnamon
dash of nutmeg

Rinse the cranberries (I always wash or soak my veggies in Veggie Wash)

Add all ingredients to a sauce pan and cook at low for 1 hour.
Turn the heat up and bring to a boil and boil for 5 min.
Let cool and refrigerate.

I also cooked some brussels and carrots to bring along with us!

We got to my Mom and Dads place at dinner time on the 24th and my sister and I still had to finish the gift we were making for Mom and Dad – I know we are so Martha!  We crafted a gift for them this year :)  We made them pictures for their bed room!  I got this wonderful idea from Ryan’s sister and thought it would be great for Mom and Dad (we also made one for nana too).  You just need to buy frames and some fabric and you make pictures out of the fabric!

After the crafting it was time for everyone to gather for dinner!!

On Christmas morning, we headed back to my parents place for some champagne and OJ and some wonderful breakfast!  I brought my Christmas morning Cranberry Lemon Loaf over and it was a huge hit!

After breakfast we played on the new Wii fit we got and learned that my balance is not as great as I thought it was….So yes, I have set my goal on my Wii and will be hitting these exercises hard!

We had to head to Ryan’s families place for Christmas dinner and that was fun with the kids opening all their gifts and running around!

We ate dinner and called it a night!  We have been so tired staying up late these last few days getting things done with the business and for Christmas by the time Christmas night came we just wanted to go home.  When we got home we ate some mint chocolate cookies and watched Friends on DVD.  Then hit the hay!  It was great :)

Today we will go with my family and see the movie Sherlock Holmes, I will let you all know how it is 😉

    Glad to see you had such a good Christmas! I totally meant to make that same sweet potato casserole I just didnt have any time. Im going to have to make it soon!
    That bracelet is awesome . . . did he pick that out himself? Because if he did I am very impressed!

    Santa spoiled me! This was supposed to be a light Christmas becuase my parents need a new roof, and well, Im broke. But apparently no one listened! Im not complaining though.

    YUMMY, I wish I was at yours for Christmas dinner rather than being on a plane for 18hours. At least I got to get home at the end of it. Looks like you had a wonderful day Kris. Happy Holidays honey :)

    Where are the pics of Ryans's family? You guys seem to spend a lot of time with your family and not his.

    Thanks for the comment! That is a very good point – I must take more pics when we are at Ryan's family gatherings and ask them if it is ok if I post the pictures of them and their kids online.
