Are you over the moon with the weekend approaching??
I know I am! I get to get myself all packed up and ready to hit the road Tuesday morning. Ryan and I are heading up to Penticton to see our friends compete in Ironman! We are stoked and ready for some heat, good laughs and a week without this guy….
Michelle {Auntie Shelleybabe} is here to snuggle and give him all the lovin’ that we aren’t. Lucky her.
When Hudson was a pup, we left him once and both Ryan and I felt lost without him…we couldn’t wait to come home to squeeze his little fur face, but now, someone wants him for a weekend, we say SURE! 3 years later we are fine with a little break
I know, I know, most of you would like to see the Delicious Oatmeal Carob Chip Cookies from yesterday’s post on this Treat Friday Special, but not today my friends. Today is Almond Butter GOODNESS!
I loved the criss crosses that my mom would put in the top of homemade peanut butter cookies. I could watch her for hours dip the fork into a measuring cup of warm water and beautifully make the tick tack toe pattern on my fav cookies. The smell in the house was blissful when it was Peanut Butter Cookie day!
I was dreaming of Peanut Butter cookies ever since I spotted some on Avery’s blog the other day and my mouth started watering. I was saddened when I remembered I NEVER buy peanut butter! Why do I never buy peanut butter?? It’s the cheapest friggin “butter” out there!
Anywhoooo…onto the next best thing, and honestly probably the best for this tummy of mine anyways. Almond Butter. The glorious smooth almond butter. {thank you Costco for providing us with tubs and tubs of creamy almond butter for delicious treats!} These cookies today are not ONLY flourless {hello gluten free friends!} they are also Sugar Free!
Flourless Almond Butter Sugar Free Cookies:
2 flax eggs
1/2 – 1 tsp stevia powder
1/4 cup water
2 cups all-natural organic almond {or peanut} butter
1 tbsp honey {optional but tasty!}
1/4 cup dark chocolate chips
To Make Flourless Almond Butter Cookies: Preheat oven to 350.
Mix flax eggs together and let sit for 5 minutes. Mix the stevia in water sugar until well blended.
Mix together the flax eggs, stevia, and almond butter until smooth.
Stir in chocolate chips.
Spoon cookie dough onto parchment lined cookies sheets.
Bake for 12 minutes!
These are pretty tasty cookies if you ask me
Now, I’m off to an appointment and to the grocery store!!

These look so simple and amazing!! Just made gf cookies yesterday and used ground flax to replace eggs and they were incredible… can’t wait to make these almonds cookies =)

Love those cookies! I buy alot of peanut butter..too much actually..and then I am left with like 5 jars and a PB stomach ache cuz I can’t stop eating them
