Happy Friday!!!
Ohhhhh how I love Friday’s! Are you ready for the weekend??
The vacation has been a nice way to break away from my norm, eat a little bit worse than usual {mmmm lots of gluten free pretzels and sandwiches for lunch!} and stay up late playing Cranium with friends. But honestly, I needed to bring a little bit of “Kris” back into the vacay world and hop back into the kitchen.
I toyed with the idea of just doing a boring ol’ fruit salad with all the abundant amount of Fresh Okanagan Fruit we have here, but I decided that just ain’t my style for a Treat Friday post, so I baked up something super healthy and might fine! Oatmeal Spelt Peach Cookies!!
Searching around online for tasty treats to make for your friends is pretty darn wonderful while sitting by the pool
As soon as I purchased the squishy sweet peaches from the market the other day I knew in my soul that I was going to make something delightful with them. I thought at first maybe a crisp, then I thought maybe a tart….mmmm peach tarts….then I remembered that in 2 days we have to be driving around Penticton for 10 + hours cheering our Ironman Friends on and we would need snacks! So 2 batched of Oatmeal Spelt Peach Cookies it was!
Will all of these cookies last till Sunday?! I don’t think so! They are almost all gone and it’s only been a day….boys.
Oatmeal Spelt Peach Cookies:
1 cup Quick Oats
1 cup Spelt Flour
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Cinnamon
1/4 cup Fresh Peaches {Chopped}
1/4 cup Dark Chocolate Chips
1/2 tsp Vanilla Extract
1/2 cup Honey
1 Ripe Banana {mashed well}
To Make Oatmeal Spelt Peach Cookies: Preheat oven to 375.
Mash the banana and mix the honey and vanilla into the banana.
In a separate bowl whisk together the dry ingredient, including the chocolate chip. Toss the peach pieces into the dry mixture and coat well.
Add the wet to the dry and mix well.
On a parchment lined cookie sheet drop teaspoon size batter onto the sheet.
Bake for 10 – 12 minutes.
These have to be the best summer cookies ever. They are hearty, fresh and super PEACHY!!

Hey Kris,
I keep reading that spelt is not gluten free – is it? I have always been a bit confused when it comes to this grain.

I’m pretty sure it’s not gluten-free. I eat 100% gluten-free and it’s not included in my diet. I just looked it up to double check, and the sites said it’s not gluten-free…it’s a species of wheat and contains gluten.

No it is not gluten free, but for myself with a wheat allergy I am fine digesting spelt. I eat it on occasion

They will work with a GF blend, just add xantham gum to it

Umm Delish! I love that these are made with spelt too, they are healthier and therefore I can eat more
