Dark Chocolate Covered Potato Chips

Happy Wednesday!

There was two things I learned for sure from the Atlanta trip last weekend.

1.  I will never get sick of Mexican Food.

2.  I have a very, very, strange addiction to chocolate.  Not any chocolate, Dark Chocolate.

Walking down the isles of Trader Joe’s {heaven on earth!} I had a child like jumping up and down freak of the week tantrum when I came across this bad boy staring at me……

Come on.  A Pound plus Extra for $4.99?!  INSANE.  It’s 72% baby!

So while at Trader Joe’s we also passed some decadently delicious, salty yet sweet Chocolate Covered Potato Chips.  We went to Atlanta for Business but also went with Krista and Josh, Ryan’s sister and brother in law and Krista is just as much of a chocolate lover as I am.  Ryan and I shopped the isles of Trader Joe’s separatly from Krista, but the funny thing is we all picked up the chocolaty chips and then put them down.  Krista was the one with the gonades to actually purchase the chips and we all dove into them on the walk back to the hotel room.

Swoon.  Swoon.  Triple Swoon.  Who would have thought chocolate and salted potato chips would go so well together?

When I rolled out of bed this morning I remembered that I had some PopChips in the cupboard, and well, a HUGE bar of dark chocolate.  So around noon I made some healthier than Trader Joe’s Chocolate Covered Potato Chips.  When working with air popped chips they are less cals than regular deep fried or baked potato chips, so they’re a bit easier on the cellulite….don’t eat them daily.

Dark Chocolate Covered Potato Chips:

2 squares of Bakers Chocolate {I used 72% Dark Chocolate}

2 cups plain Potato Chips

To Make Dark Chocolate Covered Potato Chips: Melt chocolate.  Use a brush and paint a thick layer of dark melted chocolate on each chip, front and back.

Allow to air dry and serve when the chocolate has hardened.

AMAZING!

I ate these tasty treats while watching Captain America last night, enjoying every single bite and every bit of chocolate that was left behind on my fingers.

    I’m loving the card readings. I especially liked yesterday’s reading because I just started a new job.
    Chocolate covered chips are delicious. I have a similar recipe but it involves chocolate and butterscotch chips. Nobody believes how good they are unless they try them. :)

    BRILLIANT!! I totally want to make these :D I’m not the biggest potato chip person, but if they’re covered in chocolate….heck yeah!

    I can’t think of anything particularly weird that I’ve covered in chocolate, but I’m sure I’ve tried it all. Chocolate raisins were my treat last night ;)

    If there is one thing that I do not take for granted, it is living near a Trader Joe’s. I had one where I went to college and got used to my weekly shopping trips there. Then I moved to Maui, and sadly no Trader Joe’s. Then I moved back to Oregon and had a Trader Joe’s 5 min from my home.

    i have to say that my favorite chocolate pairings is actually one that I learned off of iheart, coconut oil, cranberries, nuts, flaxpuff cerial, chia seeds and dark chocolate. It hits the spot everytime.

    Hi Gorgeous!! I wish we had TJ’s here in Canada! I can’t get over how cheap their stuff is compared to Whole Foods and other shops up here in Vancouver! I almost died!!!

    Thanks for the recipe! The new Chocolate Covered Potato Chips at Trader Joe’s have been staring me in the face, yelling, “Get me! Get me!” But at around $5 for “just one taste,” I always passed on it. Now, I can try the delicious combo on the cheap and only a few at a time – instead of an entire bag of “just one chip”. Haha.
